Botanicals and snacks: In conversation with TeaSquares founder - FoodNavigator-USA.com

The global botanical extracts market—which includes all uses for botanicals, of which dietary supplements account for the largest market—is projected to reach $7.59bn by 2025, growing at a CAGR of 8.7%, according to Market Watch​.

The market for foods and beverages that contain botanicals is projected to be valued at $1.49bn by 2025, growing at a CAGR of around 3.2%, according to Zion Research​. Of this, beverages hold a predominant share.

According to Buckner, who founded TeaSquares in 2016 infusing ingredients such as green tea, ashwagandha, matcha, and blueberry açai into bite-sized snacks squares, botanicals and beverages have a natural history together.

"There’s this legacy of usage in the beverage category. Even if you look at ingredients from Eastern medicine, a lot of time they're blended as a beverage or as a tea,"​ he told FoodNavigator-USA.

Consumers also tend to naturally associate beverages (e.g. coffee, tea, wellness shots) with providing functional benefits, he said.

Botanicals in food, challenges and opportunities

However, the opportunity for botanicals is continuing to extend beyond beverages and into functional snacks -- thanks in part to the growing 'food as medicine' consumer notion, notes Buckner -- and snacks leveraging botanicals have a unique opportunity to capitalize on the botanicals trend.

Buckner who now leads Foodbevy.com, an online community connecting food and beverage entrepreneurs with resources to grow their brand/business, is witnessing this trend first hand.

"There are a number of brands that are starting to incorporate them into foods,"​ he said. One of Foodbevy's members, B.T.R. Bars, makes a line of functional bars using ingredients including ashwagandha and other adaptogens.

A newly-formed incubator at US food manufacturer Post Holdings has announced a "joint collaboration" with barley-based ingredients firm EverGrain to create "sustainable" food products.

Bright Future Foods, set up last year to, in Post's words, "identify new technologies, business models and trends that have the potential to disrupt the food and beverage industry", is teaming up with EverGrain to work on innovation in the area of in "climate-positive" snacks.

In a statement, Bright Future Foods and EverGrain said any products developed would "be formulated using EverGrain's circularly sourced barley protein and fibre and Bright Future Foods' climate-positive oats".

A spokesperson for Bright Future Foods declined to provide specific details on the type of products other than to say the partnership seeks to "reimagine agriculture and the food supply to create more climate-friendly food and beverage options". The company also did not want to share information on the individual investments in the project. 

EverGrain, based in St. Louis in Missouri, is backed by beer giant Anheuser-Busch InBev. It has invested almost US$100m in a site in St. Louis owned by Anheuser-Busch that will become the ingredients company's headquarters. 

Greg Belt, the CEO of EverGrain, said in a statement from Post Holdings, which is also based in St. Louis: "We are thrilled to partner with Bright Future Foods on reimagining the food-supply chain and developing products that are nutritious, great-tasting and sustainable. They are pioneering new ways to help address climate change through food and we are proud to partner with them on that journey."

Bright Future Foods CEO Mark Izzo added: "EverGrain's innovative processes make its barley-based ingredients one of the most sustainable plant protein and fibre sources in the world, while Bright Future Foods is pioneering climate-friendly snacking that starts with greenhouse-gas-removing grains and targeted sustainable agriculture practices. 

"This collaboration allows us both to leverage our deep-rooted knowledge in agriculture and food processing to pioneer creative and sustainable new solutions for tackling the world's most pressing sustainability challenges." 

Asked to explain the terminology around "greenhouse-gas-removing grains", the spokesperson responded: "We are pioneering the latest scientific practices and advancements to support the environment, allowing us to farm differently so that our oats can remove CO2 from the atmosphere by sequestering it in the soil. This helps make agriculture a solution to climate change, not a contributor."

Bright Future Foods, meanwhile, will launch its debut product in oat-based snacks on 17 May under its Airly brand – Airly Oat Cloud Crackers – which will be available online through the company's website and on Amazon, and will soon roll out in "several grocery store chains", the spokesperson confirmed.

Introduced in India in January 2020, Kari Kari is a premium, healthy, rice based crunchy snack.

“Kari Kari will now be available at Perth, Sydney & Dubai. The brand will also be distributed through the grocery chain store Aldi in Australia. LT Foods also plans to expand distribution of Kari Kari in GCC and New Zealand markets,” the company said in a statement.

Kari Kari is manufactured at the manufacturing facility at Sonepat, Haryana through indigenously grown and sourced ingredients.

Trail mix is a combination of dry fruits and nuts that sometimes has chocolate and grains as well. It is very easy to make at home and would require only a few minutes of preparation. It is a much healthier version of the regular namkeen, and is a great replacement for your tea time snack. For every 56 grams of trail mix you eat, your body is provided with 8 grams of proteins. This is an ideal high protein snack option for vegans and vegetarians. You can power-pack your trail mix by choosing to use nuts that are known for their high content of protein.

Here is a simple sample recipe to put a high protein trail mix together: Take nuts (about 10 almonds, 10 peanuts, 10 cashew nuts) and seeds (consider a tablespoon each of pumpkin seeds and of sunflower seeds) together in a large mixing bowl. Enliven the mix with dried cranberries (about a tablespoon) and dried coconut slivers (also about a tablespoon).

Combine well. If you like, you can also add a tablespoon of dark chocolate chips. Adapt this mix as per your requirements; avoid salted nuts if you have high blood pressure, and be judicious in your consumption if you are trying to lose weight. Keeping the nuts whole means that you can pick from your portion a nut at a time, which also leads to better satiety.

TIP: Use high protein nuts such as almonds and pistachios in your trail mix.

Yoghurt has always been known as a healthy food staple in every Indian household. Yet, very rarely do Indians treat yoghurt as a snack; it is usually an additional meal side or dessert. It is time to change your perspective. Greek yoghurt, which is essentially hung yoghurt, is an ideal healthy snack to have, with 20 grams of protein in a 224 gram serving. This is also a good snack option for vegetarians.

The great thing about Greek-style yoghurt is that it can be adapted to make a wide variety of interesting high protein snacks. One of these is a yoghurt parfait.

Preparing a yoghurt parfait is very easy: combine one cup of yoghurt with granola and mixed berries in layers. Granola provides an additional 4 grams of protein in your parfait per 28 grams.

Don’t have the time and inclination to go into the layering that a yoghurt parfait calls for? Combine your yoghurt with the high protein nuts that we discussed in the earlier point, or, better still, just add a serving of trail mix to your yoghurt. This has the added advantage of giving you textural differences in your high protein snack.

TIP: In addition to being a great source of protein, Greek yoghurt is high in calcium, which is important for bone health.

Roasted Chickpeas As A High Protein Snack

Chickpeas have an excellent nutrient profile in comparison to other legumes. Also known as garbanzo beans, chickpeas are one of the recommended sources of proteins for vegans, as they cannot get their proteins from meats and animal byproducts. Every 82 grams of chickpeas has 7.5 grams of protein, making chickpeas an excellent high protein source.

Roasted chickpeas work great as easy munchables, a snack that you can eat as you walk along; this portability means you have no excuse to not carry a healthy snack along with you.

By roasting the chickpeas, you add a crisp texture and smoky flavour to your chickpeas, making them yummy and healthy!

To make interesting roasted chickpeas, bake about 500 grams cooked, drained and dried chickpeas on a greased baking sheet in a preheated oven (400 degrees F) for 15 minutes. Remove from the oven, and drizzle with half teaspoon to one teaspoon olive oil to coat. Mix together half teaspoon cumin powder, half teaspoon chilli powder, half teaspoon garlic powder, half teaspoon sea salt and quarter teaspoons each of onion powder, coriander powder and pepper powder in a small mixing bowl.

Sprinkle the spices over the roasted chickpeas, stir gently on the tray to coat, and return to the oven to roast for another 10 minutes. Remove from the oven and stir, then return to the oven, and bake for another five to 10 minutes, until the chickpeas get crisp. Allow the chickpeas to cool in the oven; they will also crisp up as they cool.

TIP: The fibre and nutrients in chickpeas might help reduce the risk of several conditions such as heart disease, type 2 diabetes, and some cancers.

LT Foods rose 0.56% to Rs 72.05 after the company announced the expansion of its premium rice-based snacks brand "Kari Kari" to Australia and UAE.

The company said that its joint venture company with Kameda Seika, Japan's largest Rice Crackers Company, has started exporting Kari Kari in the markets of Australia & UAE.

Introduced in India in January 2020, Kari Kari is a premium, healthy, rice based crunchy snack. Inspired by the famous Kameda Crisp a leader in Japanese rice cracker market with around 30% share, 'Kari Kari' is made from rice and peanuts offering a range of hearty & wholesome savoury snack in four different flavours Chilli Garlic, Wasabi, Salt & Pepper and Spice Mania.

Kari Kari is manufactured at the company's manufacturing facility at Sonepat, Haryana through indigenously grown and sourced ingredients. LT Foods is also growing a specific type of rice locally, which is the key ingredient in the snack.

The premium snacking market in India is estimated at Rs 500 crore and growing at a CAGR of over 25%.

Ritesh Arora, India Business Head, said, "Kari Kari is targeted at the young, health conscious & upwardly mobile consumers, who look for healthier options and are open to experimenting with international flavours. With consumers gravitating towards healthier snacking options, we are extremely bullish on the prospect of Kari Kari both in India & in global markets."

LT Foods is a branded specialty foods company. The company is engaged in milling, processing and marketing of branded and non-branded basmati rice, and manufacturing of rice food products in the domestic and overseas market. Its geographical segments include India, North America and Rest of the world.

The company's consolidated net profit increased by 46.1% to Rs 66.33 crore on a 7.9% rise in net sales to Rs 1074.98 crore in Q3 FY21 over Q3 FY20.

If you enjoy mutton, you can pretty much have it in any form. Most mutton lovers are typically very fond of mutton keema. Mutton keema is basically just mutton minced into a fine mixture. It is often seasoned with salt and spices to make a range of meaty, delicious dishes. One of the most common uses of keema is in the preparation of kebabs. Kebabs like galouti kebab or boti kebab that are traditionally supposed to be very soft use a tremendously fine mixture of keema and a tenderizer to get that melt-in-mouth quality. But there lies a whole world beyond kebabs where keema can shine on its own. Take for instance this keema gujiya that has all it takes to appeal to all meat lovers.

Keema is a minced meat dish

Here's what you would need to do:

For the filling: 
1. Take mutton keema in a bowl, add salt, red chilli powder, turmeric powder, coriander powder and curd.
2. Marinate for 30 minutes.
3. Heat some oil, add whole garam masala and sautee a bit.
4. Add chopped onion, sautee until onions are slightly translucent.
5. Add marinated keema, garam masala powder, chopped ginger and dry fruits. Keep sauteeing. Your filling is read.

For the outer covering
1. Take maida, add ghee, salt and water and make a soft dough.
2. Pull out round chunks and roll a thin round roti.
3. Add keema in the centre of the roti that you just rolled out.
4. Press the edges of the roti together, till you get a semi-circle dumpling. You can take the help of some water to do that. Make sure edges are nicely sealed to prevent your gujiyas from breaking.
5. Once the edges are secured. Deep fry them in oil on medium flame.

Lighten your hectic evening with these interesting and mouth-watering evening recipes:

1. Peri Peri Kanda Bhajiya

Ingredients: 

  • 100 gm Onion  
  • Salt to taste 
  • 1/2 tsp coarsely ground coriander seeds 
  • 1/4 tsp turmeric powder 
  • 1/4 tsp jeera powder 
  • 1/2 tsp red chilli powder 
  • 2 chopped green chillies 
  • 1 tbsp chopped coriander leaves 
  • 50 gm besan 
  • 1 tbsp cornflour 
  • Oil for frying

 
Method of Preparation 

  1. Slice onions, sprinkle salt and keep aside for 10-15 mins. 
  2. Add all the ingredients except besan and cornflour. Mix well 
  3. Now add 1 tbsp cornflour and little by little besan, only as much as onion sweats water after adding salt. Do not add extra water if you want pakoras to be light and crispy golden brown in colour. 
  4. Heat oil in kadhai and fry till crispy 
  5. Now serve hot sprinkled with peri peri powder along with green chutney and tomato ketchup

2. Cheese Chilli Corn Toast with Coriander Tomato Salsa

Ingredients 

  • 1 loaf Crusty Garlic bread  
  • 25 gm garlic butter 

Topping: 

  • 100 gm Grated cheese 
  • 50 gm cheese spread 
  • 2 Chopped green chillies 
  • 1 tbsp coriander leaves 
  • 50 gm Boiled corn 
  • 50 gm chopped onions 
  • Salt to taste 
  • 1/4 tsp crushed black pepper 

For coriander tomato salsa: 

  • 2 tbsp chopped coriander leaves 
  • 3 tbsp tomato ketchup 
  • 3 tbsp chopped tomatoes 
  • 1 tsp Chopped basil leaves 
  • 1 tbsp chopped onions 
  • 1 tbsp chopped bell peppers 
  • 1/2 tsp lime juice 
  • 1 chopped green chilli 
  • Salt and pepper to taste 
  • Few dashes of hot pepper sauce 
  • 1/2 tsp chopped garlic 
  • 2 tbsp olive oil 

Method of Preparation: 

  1. Cut garlic bread into thin slices and apply garlic butter on to it.  
  2. In a mixing bowl, mix all the topping ingredients properly and then apply evenly on prepared slices of garlic bread and bake in preheated oven at 220 Degree C for 10-12 minutes, till cheese is melted and there is a nice light brown colour on top. 
  3. Till the bread is baked, make the salsa. In a mixer jar, add tomato ketchup, fresh tomatoes chopped, coriander leaves and green chillies and grind to a fine paste. Remove it in a mixing jar and add all the remaining salsa ingredients.  
  4. Adjust seasoning and serve with hot baked cheesy chilli corn toast.  
  5. Note: the salsa can be made well in advance and stored in a refrigerator for at least 2-3 days.

3. Taco Lime Spiced Mutton Kheema Samosa

Ingredients: 

  • Patti samosa wraps 
  • 2 tbsp Refined flour 

For filling 

  • Oil for frying 
  • 250 gm mutton kheema 
  • 150 gm Chopped onion  
  • 1 tbsp garlic paste 
  • 1 tsp ginger paste 
  • 2 Finely chopped green chillies  
  • Salt to taste 
  • 1/2 tsp coriander powder 
  • 1/2 tsp cumin powder 
  • 1 tsp spicy red chilli powder 
  • 1/4 tsp turmeric powder 
  • 1/2 tsp garam masala powder 
  • 1 tbsp taco seasoning mix 
  • Juice of 1 lime 
  • 50 gm chopped bell peppers 
  • 2-3 tbsp Chopped coriander leaves 

Dips 

  • Spicy green chutney 
  • Tomato salsa  
  • Green chilli infused sour cream 

Method of Preparation 

  1. In a fry pan, heat oil. Then add chopped onions and saute it till nice golden brown in colour. Now add garlic- ginger paste, Finely chopped green chillies and saute for another 2 minutes. 
  2. Add ground mutton, little water or stock to it and stir fry on high heat for 5 - 7 minutes till meat is half cooked. Now add all the remaining ingredients for the filling and cook till meat is well done and all water is evaporated. Make sure that the mixture is completely dry. Transfer it to a bowl and let the filling get completely cool. 
  3. Now stuff the filling inside samosa Patti and seal the edges with a mixture of water and refined flour paste and fry in hot oil till crispy and golden brown in colour.  
  4. Serve hot with tangy tomato salsa, spicy green chutney and green chilli-infused sour cream.

At the thought of breaking his Ramadan fast with a snack of sambusa, a deep-fried savory pastry triangle popular in Yemen, Issa al-Shabi's face lights up with joy.

On a street in the capital Sanaa, bustling with shoppers stocking up on tasty treats for iftar, the meal observant Muslims have after sunset during the Islamic month of fasting, Shabi grins and his eyes shine in anticipation.

"The sambusa is a beautiful food, and tastes delicious," he says, jabbing the air with his hand for emphasis. "Especially so during this blessed month."

Ramadan brings out a zeal among Muslims everywhere for particular memory-laden foods.

Sambusa stuffed with vegetables or meat are found across the Middle East and are a cousin of the South Asian samosa. In Yemen, they are a much-loved tradition and a business opportunity for those who know how to make the best ones.

"People compete to get the best sambusa," Shabi says, adding that shops known for their cleanliness, the skill of their staff and the quality of their ingredients fill with jostling customers.

Yemen has endured six years of war that has left millions hungry and some parts of the country facing famine-like conditions. The country does have food supplies, but a deep economic crisis has sent prices skyrocketing out of the reach of many.

For Yemenis able to spend, the joy of a crispy sambusa, spongy rawani or syrupy baklava is at the heart of the Ramadan experience.

These traditional treats, enjoyed at iftar, keep people going through the night until they resume their fast at dawn, refraining from eating or drinking throughout the day.

"You can consider them as one of the main meals. People crave them after fasting, after the fatigue, exhaustion and thirst," says Fuad al-Kebsi, a popular singer, sitting down with family and friends to share sweets for iftar.

For those with a sweet tooth, Ali Abd whisks a bowl of eggs into a cloud before adding flour and vanilla. Tins of his yellow rawani cake are baked in a wood-fired furnace before being cut and drenched in aromatic syrup.

The draw of sweets from one particular shop he rates highly brought Muhammad al-Bina from his house on the edge of town into central Sanaa.

"The sweets are awesome. Trust me!" he says, beaming.
