5 Quick Snacks for Working Mothers | Femina.in - Femina

The extended work-from-home norm has made our lives tough, especially for working mothers. They have to manage the responsibilities of the entire house and meet deadlines set at work. This is made even tougher since children are also attending online classes and, as we all know, they feel hungry quite often. A lot of mothers face this challenge of how they can satisfy these hunger pangs with some yummy, delicious recipes. Don’t worry, we have you covered. Here are some easy and tasty recipes by Mr. P. Bhattacharya, Group Head- New Product Development, HyFun Foods and Consultant Psychologist, Jaslok Hospital & Research Centre, for working mothers to make their work easier.

1. Cheesy Barbeque Quesadilla

Ingredients:

• 4 pcs 8” Tortilla
• ½ cup cooked Red kidney beans and Rice mix
• 1 pack barbeque Bites
• 2 sprig coriander leaves, finely Chopped
• 2 cups cheese mix (1 cup of each, Parmesan & Mozzarella)
• 2 tsp Mexican seasoning
• Salt to taste
• 2 tbsp Oil
• Salsa sauce, for serving

Method:
1. Deep fry or air fry barbeque bites.
2. Apply gently oil in a tawa place the tortilla and cook for a minute in low flame.
3. Remove from tava, spread the beans and rice mix only up to half of the sheet.
4. Sprinkle the Mexican seasoning.
5. Top it with fried barbeque bites.
6. Spread cheese mix only up to half of the sheet.
7. Top with coriander leaves.
8. Fold it into a semi-circle and place it back onto the tawa and cook it till the cheese melts.
9. Slice it into pieces and serve hot with salsa.

2. Pita Veggie Pockets

Ingredients:

• 1 pack Chilli Garlic Poppers
• 2 6” Pita breads
• ½ cup hummus spread
• ¼ cup paneer
• 4 leaves lettuce leaf
• ¼ cup fresh vegetables (carrot/cucumber, capsicum any color, radish, onions any of your favorite vegetable)
• ¼ cup baby tomatoes
• 2 tsp olive oil
• Dried oregano, as desired
• Salt and black pepper, sprinkle to taste

Method:
1. Deep fry or air Fry Chilli Garlic Poppers.
2. Take a mixing bowl add in veggies and Paneer, sprinkle with Olive oil, oregano and seasoning and toss it gently.
3. Gently warm the pita bread cut it into half.
4. Spread the hummus inside the pita pockets.
5. Place lettuce leaf.
6. Stuff with veggies and paneer.
7. Place the Chilli Garlic Poppers.
8. Enjoy a healthy pita!

3. Aloo Tikki Chaat Wrap

Ingredients:
• 1 pack aloo tikki
• 4 pcs chapati
• ¼ cup sweet tamarind chutney
• ¼ cup green chutney
• 1 tsp cumin powder
• ½ tsp red chilli powder
• ½ tsp chaat masala
• ½ cup bhujia sev
• Few fresh coriander leaf (rough cut)
• 1 tsp salt

Method:
1. Deep fry or air fry readymade aloo tikki.
2. Make the chapatis.
3. Spread a layer of tamarind and green chutney.
4. Place the two aloo tikki one beside the other (you can cut it to half as well).
5. Sprinkle on top mixture with chaat masala, chilli powder and cumin powder.)
6. Balance the salt to taste.
7. Add sev bhujia and garnish with chopped coriander.
8. Serve with dips of your choice.

4. Hot Dog Sandwich

Ingredients:
• 1 pack French fries
• 2 Hot dog buns
• ½ cup onion
• 2 tbsp Jalapeno
• 4 lettuce leaves
• ½ tsp Oil
• Salt to taste
• Peri peri Sauce, as per taste
• Mint Mayo, as per taste
• Cheese/butter spread, as per choice

Method:
1. Deep fry or air fry French fries.
2. Heat a pan and add oil, sauté sliced onions for two minutes. Keep aside.
3. Slice the hot dog bun and toast on the inside for a minute inside an oven or over a tawa.
4. Spread the butter or Cheese inside the hot dog, place the lettuce leaf and top onion.
5. Add French fries.
6. Top with Peri Peri and mustard sauce.
7. Top with jalapeno.
8. Sprinkle salt as desired.
9. Serve with ketchup.

5. Jalapeno Cheesy Spaghetti

Ingredients:
• 1 pack Jalapeno Cheese pops
• 250 g spaghetti
• ¼ cup tomato basil pasta sauce
• 1 tbsp green sliced olives
• 3 cloves garlic
• 2 tbsp olive oil
• 1 tsp red chilli flakes
• 1 tsp dried oregano
• 4 cherry tomatoes
• Salt to taste
• White pepper powder, to taste
• 1 sprig fresh parsley

Method:
1. Deep fry or air fry the jalapeno cheese pops.
2. Cook the spaghetti as mentioned on the pack.
3. In a hot pan, add olive oil.
4. Add in finely chopped garlic.
5. Let it sauté for a minute.
6. Add in chopped olives, chilli flakes and pasta sauce.
7. Let it cook on low flame for a minute.
8. Mix in cooked spaghetti and cherry tomatoes.
9. Add Jalapeno cheese pops and give it a mix.
10. Garnish with chopped parsley.
