The summer holidays are here, which means lots of fun and, of course, playful hungry kids home all day! Homoeopath, trichologist and nutrition and stress management expert Dr Khushboo Thakker Garodia is a nutrition counsellor, a specialist in sports nutrition and a clinical hypnotherapist. She shares these recipes that are certain to help if you’re wondering what to feed your children and keep it yummy and healthy.
Fruit Popsicles
These summery pineapple mango popsicles are the perfect way to cool down on a hot day. They’re made with just a few simple and fresh ingredients, and are perfectly sweet and creamy, and completely free of refined sugar
Ingredients
3 mangoes, chopped
1½ cups chopped pineapple
½ cup hung yoghurt
2 tbsp lime juice
2 tbsp honey
2 tsp vanilla
Method
- Blend all the ingredients together until completely smooth.
- Taste and adjust the sweetness as desired.
- Transfer to popsicle moulds and fill just below the top. Insert the popsicle sticks.
- Place in the freezer for at least six hours. Enjoy!
Minted Lime
This mint lemonade recipe is easy and refreshing. The cooling, herbaceous notes of mint pair perfectly with the zing of lemon.
Ingredients
Juice of 7 to 8 lemons
7 cups water (divided usage)
1 cup granulated sugar (or less, as desired)
1 cup loosely-packed mint leaves
Method
- Add the lemon juice to a pitcher with six cups of cold water.
- In a blender, combine the sugar, mint leaves and 1 cup warm water. Blend until fully combined.
- Strain the mixture through a fine mesh strainer into a bowl. Then strain it back through the strainer into the pitcher with the lemon juice. (Double straining helps to remove sediment that would otherwise form at the top of the liquid.)
- Serve immediately.
Mango Coconut Chia Energy Drink
Loaded with antioxidants and vitamin C, this drink replenishes energy and serves perfectly as a post sport or play beverage.
Ingredients
2½ cups coconut water
2 cups mango chunks
2½ tbsp chia seeds
Method
- In a blender, combine the coconut water and mango chunks and blend until smooth.
- Pour the mixture into a glass and add the chia seeds.
- Stir very well and enjoy.
Creamy Avocado Dip with Veggies
Ingredients
1 firm ripe avocado, halved, pitted and cut into large chunks
¼ cup hung yoghurt
3 tbsp grated cheese
Juice of 1 lime
Pinch of red chilli powder
Salt
Cucumber and carrot sticks, to serve
Method
- Blend all the ingredients with one tablespoon of water in a food processor or blender until smooth and creamy.
- Serve right away with cucumber and carrot sticks.
Munchie Necklace
That’s the name my children coined for this crafting, learning and snacking activity. Toddlers, preschoolers or kindergarteners will have fun threading snacks onto the string, turning snack time into a creative activity. Little hands, and the string and needle, must be washed well before the activity.
What You Will Need
Elastic string
Yarn needles
Scissors
Fruit cut in blocks (apples, pears)
Grapes
Berries
Paneer cubes
Cheese cubes
Olives
Mini marshmallows
Fruit loops (I don’t use these, but, if your kid loves them, it’s an option)
How To Build the Snack
- Measure the length you’d like the necklace to be, then double the length and cut the elastic string. Thread the needle and fold the string in half.
- Now the fun part for the kids. Give the kids the needle to thread the snacks onto the string, remind them to leave plenty of room to tie the necklace.
- Tie the necklace. The elastic string can be tricky to tie. The easiest way is to form a loop around your finger and push the string through. Pull VERY tight. If you just pull as you normally would, it will come undone right away. The trick is to pull hard enough.
