These Five Trends Will Redefine Global Snacks to 2027 - Euromonitor International

Snacks sits on the cusp of transition. 2021 saw a more than encouraging sales performance, with constant retail growth accelerating by 0.8 percentage points to reach USD620 billion. This was fuelled by the return of social snacking and impulse purchases after COVID-19 vaccines were rolled out. 2022 will challenge real value and volume growth again, with Ukraine’s invasion causing a historically high inflation surge, pushing up production costs and applying more pressure to faltering supply chains. Yet, amidst more frugal lifestyles, snacks should weather these more volatile conditions without drama. Five key trends are to shape global snacks to 2027.

New consumption occasions for hybrid lifestyles

The lifting of most COVID-19 measures in 2021, thanks to rising vaccination rates, has created a new set of hybrid lifestyles; where the home remains a stronger hub than pre-pandemic, but people are also back to living, socialising and eating outside the home. Eating snacks at home remains the strongest snacking habit mentioned by survey respondents in 2022. And, as office workers around the world have only partially returned to the office, this response rate is still higher than pre-pandemic.

Snackification is also still strong, as more consumers have moved away from set mealtimes throughout the day. Breakfast represents a promising avenue for snacks players, as the hybrid worker desires convenience and time-saving. Weekday lunchtimes are also potential functional snacking occasions. An example of an industry response is the launch of RXBAR A.M. protein/energy bar in the US in 2022, which is positioned as a hassle-free, healthy, yet also indulgent breakfast solution.

Elevated experience through permissible indulgence

As the economic context forces many to rethink their spending habits, snacks, which remain a relatively low type of discretionary expense, can still feel like a treat. Although split on whether to increase or decrease their holiday budget, survey respondents do want to spend less overall, but more on groceries and health and wellness.

In this context, permissible indulgence through smaller treat sizes, higher-profile ingredients and sensorial novelty remain effective strategies.

Plant-based craze: Dairy alternatives populate sweet treats

The permeation of plant-based alternatives into snacks accelerated in 2021. More and more consumers perceive these as a healthier choice, although environmental concerns will also increasingly be a sales driver. In 2021, ice cream saw plant-based claims proliferate geographically outside mature markets. Etiqueta Verde competes with Not IceCream in Argentina, Yamo offers a yam-based alternative familiar to consumers in Brazil, while Kaju Vegan targets those with lactose intolerance in Egypt.

In mature markets, plant-based also gained ground quickly in chocolate confectionery. Mars and Lindt, for instance, launched dairy-free variants in the UK and Canada, respectively. However, the trend is not growing seamlessly everywhere, with more scepticism in Europe about the health credentials of plant-based snacks. Future offerings will need to be compelling both in their taste profile and from an ingredients point of view, to avoid the feeling of sacrificing indulgence.

Energy- and brain-boosting as new frontiers in health benefits

In many markets, snacks are blurring the lines with (and even cannibalising) the vitamins and dietary supplements category, by bringing to the market products with attractive functional benefits for the body and, increasingly, the mind. Energy- and brain-boosting, notably as potential competition to coffee and energy drinks, show long-term potential.

In Colombia, where access to vitamins and dietary supplements is limited due to high prices and a low presence in traditional retail, Viva Vita gummies with vitamins were launched for various age groups, both in plastic jars for home consumption and pouches for on-the-go.

Sustainable snack propositions: From claims to solutions

In 2022, sustainability remains less front-of-mind and largely a brand differentiator. Yet alongside company pledges, increased consumer awareness of its various facets, and even a greater need to diversify ingredients amidst ramping inflation, sustainability is set to become an essential component of the product proposition by 2027.

Whilst chocolate confectionery is most exposed to a potential backlash in terms of social responsibility around cocoa supply, all snacks players will need to address mounting sustainability issues, such as poverty, food and packaging waste, climate change and renewal of resources. Certifications such organic and fair trade lead the way in snacks, but packaging is amongst the biggest avenues for innovation. The natural character of ingredients and their sourcing is amongst the most viable, long-term routes to more sustainable snacks.

Future outlook for snacks

The economic outlook for the coming years continues to look tough, and perceived value will be a key consideration when consumers are looking at what to spend their money on. Whether suggesting a breakfast solution, a luxurious product with a new texture and flavour profile, a vegan alternative to chocolate biscuits, chocolate that helps focus, or a more locally sourced product, the perceived value for money will need to be unequivocal.

Monsoon brings along little joys of life. This is the season when most of us crave for some piping hot crispy and crunchy snacks to complement our tea or coffee while we enjoy the pitter-patter of raindrops and the scenic beauty all around.

And if you are bored of the usual bhajjis and are looking to experiment in the kitchen, we bring you some interesting options to try:

CRISPY PANEER FRIES

Ingredients:

Fresh paneer, Bread crumbs, Oil for frying

For marination: 1/2 tsp salt, 1/2 tsp turmeric powder, 1 tsp degi mirch, 1 tsp chaat masala, 1/2 tsp black salt, 1 tsp chopped fresh coriander, 1/2 tsp kasoori methi powder

For batter: 1/2 cup besan, 1/2 tsp salt, 1/4 tsp turmeric powder, 1 tsp chilli powder, 2 tsp chaat masala, 1 green chilli, 1/2 tsp crushed ajwain, 1 tsp chopped ginger, 1/4 tsp garam masala, 200ml water

Method:

Cut the paneer into equal finger-sized slices. Marinate it with the mentioned spices.

Take the besan in a bowl. Add salt, turmeric powder, chilli powder, chaat masala, chopped green chilli, ajwain, ginger, garam masala and water. Mix well.

Dip the paneer slices in the batter and coat with bread crumbs. Fry will it turns brown. Enjoy hot with your choice of dip.

RAJGIRA/AMARANTH VADA

Ingredients:

1 cup rajgira/amaranth flour, 4 tbsp curd, Salt to taste, 1/2 tsp red chilli powder, 1/2 tsp cumin seeds, 3-4 tbsp chopped coriander leaves, 3 tbsp water, 2 tbsp sesame seeds

Method:

In a bowl, mix the flour, curd, salt, red chilli powder, cumin seeds and coriander leaves. Add water and mix well. Knead it into a dough.

Make small balls of the dough and flatten them lightly. Make a hole in the centre. Spread sesame seeds on both sides of the vada.

Heat oil on medium flame until moderate hot. Fry the vadas until both sides are golden and crispy.

Transfer to a serving plate and serve hot with sambar or chutney.

Ingredients:

200gm boiled chickpeas, 200gm boiled beetroot, Some cranberries, Salt to taste, 1/2 tsp black pepper powder, 1/2 tsp cumin powder, 1/2 tsp chaat masala, Corn flour for dusting, Oil to fry

Method:

Grind the boiled chickpeas and beetroot. Mix them together in a bowl. Keep in refrigerator for 30 minutes. Add black pepper, cumin powder and chaat masala.

Make small balls of the dough. Add the cranberries and make flat discs.

Dust them with corn flour and fry on medium flame. Serve hot with your choice of dip or chutney.

PATORAS

Ingredients:

4 medium arbi leaves, 3 cup besan, 1/2 tsp turmeric, 1/2 tsp ajwaini, 1/2 tsp anardana, 1 tsp red chilli powder, 1 tsp ginger-garlic paste, 1/2 tsp fresh green chilli paste, Salt to taste

Method:

Wash the arbi leaves and spread them on a table. Cut the knots of leaves. Make a smooth paste of rest of the ingredients by adding water.

Apply the paste on each leaf and place them on top of each other. Gently fold them from the sides and apply some more besan paste and roll it gently.

Use a thread to gently tie the rolls from all sides. Steam them for 15 minutes through indirect steaming technique.

Keep them in the refrigerator for 30 minutes. Cut the thread and cut the rolls into round discs and golden fry. Serve hot with Imli chutney.

PAAN TOKRI CHAAT

Ingredients:

6 Paan (betel) leaves, 1/2 cup besan, 1 boiled and chopped potato, 1 cup grated boiled potato, 1 chopped cucumber, 1 chopped onion, 1 chopped tomato, 1/2 cup pudina chutney, 1/2 cup sweet tamarind chutney, 1 cup curd, Red chilli powder to taste, Black pepper powder to taste, Salt to taste, Chaat masala to taste, Roasted cumin powder, Pomegranate seeds, Nylon sev, Chopped coriander leaves, Oil for frying

Method:

Wash and clean the paan leaves. Mix the besan and salt with little water to make thick batter. Make a basket using the grated potato on the back of a ladle.

Dip the betel leaves in the batter and fry on low flame. Fry the potato basket as well.

In a bowl, mix lightly crumbled fried paans, chopped potatoes, onion, tomatoes, cucumber and pomegranate seeds. Add the chutneys and curd.

Sprinkle salt and spices according to taste. Garnish with a fried paan, pomegranate seeds, nylon sev and green coriander, rose petals on top.

    Bharatiya Janata Party Yuva Morcha worker Praveen Nettaru has been hacked to death with lethal weapons by unidentified people on a bike in Bellari, Dakshina Kannada on late Tuesday evening. In view of this development, Karnataka Chief Minister Basavaraj Bommai expressed his deep condolences to the family members of the BJP leader and assured them that justice will be served soon.     Director school education Harsuhinderpal Singh Brar has constituted an internal committee to look into the dismal performance by some government schools in the Class 10 and Class 12 exams. SteamUp Foods is tapping India's growing appetite for healthy snacks with steamed options - YourStory

Move over samosas, momos are here!

Keen to satiate the Indian consumer’s growing appetite for grab-and-go foods with healthier options, Archit Agarwal in 2019 launched Mumbai-based foodtech startup SteamUp. The startup, which began by offering a range of vegetarian momos, aims to make “steamable” foods such as idli, rolls, rice, and dhokla more readily available for people who cook – and those who don’t!

Apart from being quick and easy, steaming locks in nutrients, boosts antioxidants, enhances flavour, uses less oil, and is a versatile and eco-friendly cooking technique. 

"India is the diabetic capital of the world and all stats point towards the need for an alternative to fried food. It’s clear that healthier habits need to be inculcated from a young age. This was the first trigger for me to do something to solve this problem," says Archit, the 25-year-old founder of SteamUp Foods. 

To marry taste, health, and convenience, Archit decided to launch a “steaming revolution”. “Making vegetarian food appealing to all consumers was critical, so we began with everyone's favourite – momos," he says. 

He initially invested Rs 1 lakh raised from friends and family to bootstrap the startup.

An entrepreneurial mindset

Archit says the entrepreneurial seed was sowed when he, at the age of 16 years, interviewed Pritish Chatterjee, Director of Savera Group from Aurangabad, for a school project. Speaking to a man who had built a million-dollar company from scratch was inspiring, he recalls. 

The boy who never liked school but was fascinated by how businesses make money says business “is probably in my blood”. “My grandfather ran a small garment shop in Hingoli. My father has run a successful distribution house in Aurangabad for the past 30 years,” he says. 

Archit started his entrepreneurial journey immediately after graduation with HaFit, a healthy snack subscription-based business. He also worked part-time with brands like Lokmat Media, Vivo India, Mahindra & Mahindra, Kwaan etc to gain experience. 

The name of his new startup reflects the mission and idea of the brand. “We want to be synonymous with steamed food,” he says.

What does it offer?

SteamUp currently offers 20 momo variants in classic, Jain, vegan, and wheat options. These include mushroom, paneer tikka, cheesy corn, tofu, Peri, jalapeno cheese, and pizza. It also offers sweet versions such as chocolate fudge and white chocolate

The momos are priced between Rs 99 and Rs 180; the Tibetan sauce is available for Rs 25. The minimum order price is Rs 300. It charges Rs 40 for shipping for orders below Rs 500; it’s free for orders above Rs 500.

The startup says the shelf life of its products is nine months.

SteamUp products are available on online marketplaces such as Bigbasket, Swiggy Gourmet Store, VeganDukaan, and Vvegano, as well as offline retail marketplaces such as Reliance Signature, Nature’s Basket, Reliance Fresh, Foodhall, Sahakari Bhandar, Society Stores, Avarya Stores, Dorabjees, and Haiko Supermarket. Customers can also directly order products from SteamUp’s website.

At present, offline channels account for 85% of sales while online channels comprise 15%. The vegan-Jain-wheat-based momos account for almost one-third of total sales. 

“The first wave of COVID-19 worked well for SteamUp. Our sales shot up 20X for a brief period since there was high demand for ready-to-cook food. We saw hundreds of new customers trying our products on their own during this phase. The majority of these loved our product's taste and quality, which led to them continue ordering even after the pandemic,” Archit says.

SteamUp, which has 12 team members, sources products from different manufacturers across Bengaluru, Mumbai, and Pune. 

“Quality standards for every flavour, ingredient, and recipe are defined by our in-house food experts,” Archit says.

SteamUp claims to have sold more than three lakh packets of momos till date. It provides doorstep delivery, and has partnered with a few logistics companies. The products are currently available in Mumbai, Pune, Hyderabad, Ahmedabad, and Nashik. 

About 75% of the startup’s customers are from Mumbai; the remaining 25% come from other cities. It says it has a 50% repeat rate.

"The most common feedback we get from consumers is that they find it extremely convenient to steam and eat momos in just five minutes. Some have also made this their substitute for two-minute noodles," Archit says.

SteamUp generated Rs 1.05 crore revenue in FY22 and is currently clocking Rs 15 lakh per month.

Market and the future

The Indian frozen food market was worth Rs 124.06 billion in 2021 and is expected to be worth Rs 306.61

billion by 2027, growing at a 16.2% CAGR between 2022 and 2027, according to Imarc.

The market is chock-a-block with big brands like McCains, MTR, ITC Masterchef, and Tata Q, among others. SteamUp also competes with brands such as Prasuma Momos, Imagine Meats, Blue Tribe Foods, Wow Momos, Sumeru, and Big Sams, among others.

Archit says the differentiator is the fact that almost 95% of frozen products available are currently “to be fried or microwaved”. “We believe ready-to-steam products have the potential to take a minimum of 25% of this market share in the next three years,” he says.

SteamUp plans to expand its product range to include mini idlis, rice, rolls, stuffed idlis, stuffed dhoklas, sauces, and more.

The startup also aims to expand across 10 cities by the end of 2022. 

“We are also in talks with a few distributors in other countries. We plan to expand internationally very soon,” says Archit, adding that month-on-month (MoM) revenue growth this year should be 25%. 

SteamUp also plans to serve steamed food through cloud kitchens and QSR kiosks. "We want to have a hybrid model," Archit says. The startup has already piloted its first cloud kitchen in Versova, Mumbai.

A special, honey-comb-like Rajasthani dessert Ghewar is made exclusively during monsoon, as the dessert needs ample moisture in air to stay together. But if you do not have much of a sweet tooth, there’s much to appease your savoury cravings as well. Even though pyaz ki kachori and Mirchi vada are two snacks you can find across all seasons, but their popularity hits the roof during monsoon. After all, who isn’t a fan of the ultimate combination of baarish and something fried?

The pitter-patter can fuel your cravings for all things greasy and good and we have not one but two recipes from Chef Pavan Patel of Mahindra Holidays & Resorts India Ltd, to make the season even more memorable. For the uninitiated, Pyaz Kachori is a deep-fried savoury pastry, filled with a fiery mixture of onions and masala. This crispy treat is so wholesome on its own, you do not even need a sabzi to go along with it. It is best paired with tamarind chutney.

The next dish is the Rajasthani Mirchi Vada. Test your spice tolerance with this fired fritter, where a big green pepper is deseeded and filled with a potato mixture. The pepper is then dipped in a gram flour and deep-fried. Drooling much, here are the recipes.  

Pyaz ki Kachori

Ingredients:

  • 250 gm-Refined Flour
  • 5 gm-Ajwain
  • 50 gm-Oil 
  • Salt- 5 gm
  • 300 gm-Chopped Onion
  • 200 gm-Boiled Potato
  • 50 gm-Besan
  • Hing- pinch
  • Whole coriander seeds- 10 gm
  • Chilli powder- 8 gm
  • Turmeric- 5 gm
  • Chat Masala- 5 gm
  • Garam masala powder- 2 gm
  • Green Chilly chopped- 2-3 nos
  • Black salt- 5 gm
  • Oil for frying

Method:

  • Prepare a dough using maida, oil, ajwain, and some salt
  • Cover it & keep it aside for resting
  • Now sauté chopped onion & green chili using oil in a kadhai, then add besan and cook till it turns slightly brown
  • Add spice powder and mash the potato
  • Mix it well and remove from kadhai, now make small balls of prepared dough and roll into a 3-inch circle and stuff the mixture of filling,
  • Repeat the process of making more kachori
  • The stuffed kachoris are ready, press them with your palm to slightly flattened
  • Deep fry in medium heated oil
  • Serve it with imli chutney and fried green chilies.

Mirchi Vada

Ingredients:

  • Potatoes-boiled
  • Peeled and mashed- 300 gm
  • Jeera powder- 10 gm
  • Saunf powder- 5 gm
  • Red Chili powder- 5 gm
  • Coriander powder- 10 gm
  • Amchur Powder- pinch
  • Tamarind Pulp- 10 ml
  • Elephant pepper/ Bhajji chili- 12 nos
  • Besan- 250 gm
  • Rice flour- 50 gm
  • Ajwain- 5 gm
  • Salt- 5 gm
  • Oil for frying

Method:

  • Boil, peel, and mash the potatoes well
  • Add salt, chili powder, cumin powder, coriander powder, tamarind pulp, and amchur powder in it and mix well
  • Adjust the seasoning as per taste
  • Mix besan flour, rice flour, salt, and chili powder well
  • Add carom seeds too
  • Add water and make a thick yet flowing lump-free batter
  • Rinse and wipe the chilies dry. Make a slit in the middle keeping the edges intact
  • Stuff the prepared potato mixture well
  • Heat oil for deep frying. Dip the stuffed chilies in the prepared batter and deep fry until golden and crispy
  • Drain excess oil and serve Mirchi vada hot with mint & tamarind chutney.

Most Indians have a fondness for pakoras, which they love to consume with hot tea or occasionally even coffee! Although traditionally made with potatoes or brinjal, this delectable dish can be made using onions, kala chana, gramme flour, and a few spices.

Thekua

Thekua is a dry sweet from the Indian subcontinent that is also referred to as "Khajuria" or "Thikari." In Bihar, Uttar Pradesh, and the Terai region of Nepal, it is very well-liked. During Chhath puja, thekua is a cherished prasada, or offering to the gods. In these regions, it has been consumed for generations as a sweet snack. Wheat flour, chasni, and ghee are the key components of thekua. Jaggery can occasionally be used in place of sugar. These four ingredients are used to make dough, and cardamom can be added to improve the flavour. The dough is deep fried till it turns reddish brown in ghee or vegetable oil. When hot, it is soft, but when it cools, it becomes hard. It can be stored for several years without the use of preservatives.
