This quick air-fried mushroom is crisp, lip-smacking and just so simple to whip up!

Several Reddit bloggers tried their hands at making these crispy delights in the Air Fryer. Any kind of mushrooms can be used for this hassle-free recipe. With just a handful of simple ingredients, this air fryer mushroom can be whipped up in less than half an hour, including prep time! Apart from the ease of whipping up the air fryer mushrooms, the recipe is also completely oil-free and thus a healthy and easy snack which you can binge on, guilt-free.

Here Is The Full Recipe For Air Fryer Mushroom From Reddit:

  1. Cut up mushrooms into quarters, and then into halves. Keep them aside.
  2. In a plate, spread out some flour. In another bowl, whisk a couple of eggs and keep aside.
  3. In another container, take some breadcrumbs and season them with spices of your choice. You can use salt, pepper, Italian seasoning, paprika, garlic powder etc.
  4. Now, take the cut up mushrooms and roll them around in the flour.
  5. Make sure they are well-coated, and then repeat the process with the whisked egg and, finally, the seasoned breadcrumbs.
  6. Pop them in the air fryer and let them cook for 5-7 minutes at 200 degrees Celsius.
  7. Serve hot and fresh with the dip or sauce of your choice!

MS Raghunath aka ‘Snack Appooppan’ no more, but his delicacies still tickle taste buds - The New Indian Express

KOCHI: MS Raghunath, 66, owner of MS Bakery and known as the ‘snack appooppan’ of Changampuzha Park in Edappally, passed away around 10am on Wednesday due to  Covid. On his demise, Kochiities across the country shared their favourite delicacies prepared by Raghunath on Twitter. For many Kochiites, Raghunath was a definite part of food nostalgia. It was  irresistible to not stop by his stall to taste his delicious snacks, recollects Adithya Kamath, a 28-year-old who has been a regular visitor to Raghunath’s stall since his childhood.

Raghunath was known by different names among the people. Some called him ‘Snack Appooppan’, while others addressed him as ‘Snack Santa Claus’ and some others even called him ‘Grumpy  Appooppain’ because of his not so talkative nature to his customers, unlike  the other tea stall owners who are known for their chit-chatting. ‘Parippuvada’, ‘sughiyan’, ‘uzhunnuvada’ and ‘pazhampori’ were some of his signature snacks.

He  was one of a kind with his long white beard and silky white  hair. “Those who have been living in Kochi for many years must have been  to his shop at least once. He was that famous,” said Ardra Balachandran, a food blogger and a media professional.

 “A close friend  of mine who stays near Changampuzha Park took me to Raghu uncle’s shop  one evening. It’s a small stall behind the park. Evening 4pm to 6pm is  the peak time and probably the only time to find him at the stall. At  that time, he could be seen involved in his work, busy making snacks that vanished within seconds (as soon as) he placed them on the serving tray. Eating  those delicious lip-smacking parippuvada, one of my favourites, is indeed  nostalgia now. He will be missed,” said Ardra.

“Having snacks from  his shop had been a regular practice for me since I was a kid,” said  Adithya, who is a bank employee. “Not just the snacks but watching him  making those snacks was an enjoyable time for us  friends. He was indeed a part of my childhood memory and will always be  remembered,” he said.Reghu’s stall was like a cherry on top of a  cake. Changampuzha Park became a thriving cultural place for all age groups because of people like him, recalls Shirly Somadundaran, a close  friend of Reghu.

Having known him for quite a long time, Shirly said Raghu was a talented theatre artist and a drama producer. “Raghu was a  close friend of my husband and was like a family to us. Changampuzha  Park that we see today is because of the hard work of Raghu and others  who have been working hard to make it a culturally rich place in Kochi,”  said Shirly. “He was determined to make all activities he had been involved in a success, including plays for elders and kids organised at the park,” she said.

The decades-old stall run by Raghu was a go-to spot for food lovers. “Of all the  snacks prepared by him, parippuvada was my favourite. Ever since I moved  to Kochi, I have been a regular customer at his stall,” said writer N S  Madhavan. “The parippuvada prepared by him is the world’s best. They were flat and crispy,” he recalls.

Stock-up your pantry with hassle free snacks - The Hans India

"School Out!" a terrified client exclaimed through the phone. This pandemic, with online school at home, I'm sure like her, a lot of you mothers are at your wits end, with kids constantly craving for junk snacks. Before you give into these tantrums, remember that such food lowers immunity and puts your child at risk to a host of infections. Stock-up your pantry with hassle free snacks and safeguard your child's health.

Fruits

Chop up some seasonal fruits and keep aside for your little one to chomp on. These provide flavour as well as a heap of immune boosting mineral and vitamins. The mighty mango is my all-time favourite, but there are also Jamuns, lychees and Ice-apples to choose from.

Smoothies

Artificially flavoured drinks have become synonymous with summer and it s time we change that trend. Opt for equally delicious and fibre rich smoothies. You can be creative and add on the fruits of your choice. My favourite is blending seasonal peach and banana, with water or ice. It's just "Yum!"

Peanuts

My preferred nut is the humble peanut which also makes for a great protein packed nibbling, it has gram to gram more protein than an egg. Armed with brain boosting healthy fats, these taste delicious-roasted or boiled.

Sandwich

Here is another easy snack that can be made in a jiffy. Construct your sandwich with fibre rich, satiating wholegrain bread. Ensure you load it up with coriander chutney and sliced vegetables of your choice. Add coconut to the chutney or butter your bread well to ensure your child has a wholesome snack.

Bhel

A salty, tangy puffed rice mix is the call of the season. Add on tomato, onions, coriander chutney and lemon to make a savoury delight. This dish is both electrolyte and anti-oxidant boosting.

Aloo chaat

Here is another delicious yet healthy treat to soothe your child's taste buds. All you require is boiled potato, onions, green chillies, crushed peanuts, salt and lemon. It provides a host mineral and will keep your child full for longer.

Coconut

Have it tender, dry or toasted; it is nutritious in all forms. Let your children chew on a few pieces daily, to get in their quota of healthy fats.

Mixed seeds

Full of immune protective zinc and magnesium, seed mixes are a must-have. They also provide iron through flax seeds and calcium through sesame seeds.

Crudites

I loved snacking on cucumber crudites as a child. I would dress them with lemon juice and salt and enjoy this refreshing vegetable. Serve green chutney as a dipping sauce and your kids will love it too. Do not let poor snack choices which strip your child's immunity. Smart choices made now, will build their foundation for the future.

Nuts and seeds

Walnuts, for example, have the highest levels of anti-inflammatory omega-3s and polyphenol antioxidants, making them an excellent choice for your gut health. Blend nut butter into smoothies, drizzle them over pancakes, or combine them with savoury seasonings such as cumin or chilli powder to make a marinade, dressing, or dip for vegetables.

Oats

It is a superfood with a lot of fibre, so it's great as a breakfast option for health-conscious people. It keeps you fuller for longer, preventing you from indulging in unhealthy snacking, especially between meals. It's made to help you feel more energised. Oats are a great way to start the day because of their healthy properties. From masala oats to porridge, oats can be used to make a variety of quick and easy snacks.

Fox nuts 

Swap your unhealthy bhujia sev for this lightweight and healthy makhana. They are heart-healthy because they are low in cholesterol, sodium, and saturated fats. Carbohydrates, protein, iron, phosphorus, magnesium, fibre, zinc, and potassium are all found in them. It will keep you fuller for longer and prevent unhealthy snacking because it is low in calories and high in fibre.

Kale chips

When you're about to reach for a bag of potato chips because you're hungry, remind yourself that kale is the go-to option for a healthy lifestyle. Kale is a good choice for cardiovascular health because it contains no cholesterol or Trans fats. A serving of kale chips with a teaspoon of oil (preferably olive oil) adds about 40 calories and 4.5 grams of fat, which is significantly less than the same amount of potato chips. If you don't like kale, don't worry; other vegetable chips like jackfruit, beetroot, and carrot can be used as substitutes. Before purchasing kale chips, it is always a good idea to carefully review the nutritional table and the sodium content.

Eggs

Eggs are delicious at any time of the day and versatile as well. If you get a sudden hunger pang, grab an egg and make something interesting with it. A simple boiled egg or a scrambled egg with vegetables are both good options. Eggs can be easily stored and incorporated into any meal or snack. Eggs are a good source of protein as well as vitamins and minerals, which will help you stay healthy during the pandemic.

Peanut and jaggery chikki

17 Best Make-Ahead Camping Snacks - Greatist

Room-temperature storage

Everything on this list can be safely stored at room temperature for several days, if not longer.

If you’re camping in an RV or have a cooler that can safely keep things cold for 24 to 48+ hours, then you’re fine to bring snacks that require cold storage. But for the purposes of this list, we’re assuming you’re roughing it (aka no cooler).

Non-meltability

You’ll also want to consider the temperature of things that melt or become soft at room temp and above.

Things like chocolate, certain nut butters, and coconut oil might be fine all day in a school lunchbox with a small ice pack, but they’re less ideal when you’re in the middle of a hike without any napkins to wipe down sticky fingers.

Minimal packaging

You don’t want to bring a lot of potential litter with you into the woods, so any snack that uses minimal packaging is ideal. Some bars or wraps, especially if they’re sticky, might need to be wrapped individually. Most of the snacks on this list can be stored in a large reusable container together.

Lockdown affects snack units of Sellur - The Hindu

Families in Sellur, who eke out a living by making traditional snacks, have been severely affected due to the imposition of intense lockdown. With almost no sales during the lockdown period, the families are on the verge of starvation.

Those involved in the business say that it is a cottage industry where they make murukku, thattai and other snacks. These snacks are sold at shops in Madurai district and neighbouring Sivaganga and Virudhunagar districts.

However, since the imposition of the complete lockdown, it has become difficult to even purchase raw materials, says M. Selvarajan, owner of a snack unit. “It is difficult to purchase rice flour which is the basic ingredient to make these snacks,” he says.

The price of refined palm oil, used for frying the snacks, is sold at triple the normal price in the past few months, says K. Karthik, owner of another unit. “High prices of ingredients increases our production cost. However, we cannot increase the prices of the snacks as people already have less disposable income owing to the financial distress caused by COVID-19 pandemic. So, we hardly earn any profits,” he says.

Ever since the intense lockdown came into force, there is hardly any sales. With no income, our families are struggling to make both ends meet,” says Mr. Selvarajan.

Mr. Karthik says that they are hopeful that the situation will return to normality soon.
