(CNN)We all may be full of holiday cheer, but we're also full of holiday meals. When the indulgences of the season start to catch up with us, it's time to ditch the usual dinner for something a little more whimsical: a snack night.

When you're snacking for dinner, popcorn can't be beat. It's an ideal "main course" because it's more filling than other snack foods and doesn't rely on a fryer for flavor. It also can be made from scratch in minutes with no special equipment other than a large pot, and you can flavor it any which way you want.
It's not necessary to save popcorn night for a special occasion, either. While you can certainly pair popcorn with a movie-watching evening, there is no law against making popcorn for dinner whenever the moment feels right. Don't fight the feeling.

It's a snack that really fills you up

Popcorn is an unprocessed whole grain: In fact, it's the combination of a starchy core inside a fibrous outer hull that makes popcorn pop. It's also high in fiber, containing nearly 4 grams per 4-cup serving, and contains a significant amount of polyphenols that can help lower blood sugar levels and help digestion.
In addition, "popcorn is a filling snack due to the volume it takes up in your stomach, which keeps us from over-snacking," said registered dietitian nutritionist Julien Chamoun of RDN Nutrition Counseling in New Jersey. Popcorn has been shown to be more satiating than potato chips, meaning you'll feel fuller after eating it.
You can use an air popper to minimize the amount of oil used in making popcorn, said registered dietitian nutritionist Julien Chamoun.
Keep in mind, however, that "although popcorn is a great healthy snack, when oil gets added during the cooking process, it can double the calories and the fat," Chamoun said. He recommends an air popper as the best method to limit the amount of oil added during cooking, but if you don't want to spring for one, you can still make popcorn with very little oil per serving on the stovetop. Here's how.

How to make basic stovetop popcorn

To make 16 cups popcorn (about 4 servings), you'll need 1/2 cup popcorn kernels and 2 tablespoons neutral cooking oil, such as canola or vegetable oil.
Pour the oil into a large pot, at least 6 quarts in volume. Add two or three kernels to the pot, then cover and place over medium-high heat until you hear the kernels pop.
Once that happens, take the pot off the heat, pour in the remaining kernels, and cover the pan. Wait 30 seconds, then return the pot to the burner and cook, shaking the pan frequently, until the popping slows down.
Remove the lid to carefully allow the steam to escape, then transfer the popcorn to a large bowl to season it.

Make popcorn your own with flavor combos

When it comes to flavoring your popcorn, the options are as varied as your cravings. Popcorn can be jazzed up with an off-the-shelf blend like everything bagel or Old Bay seasoning, but it's always fun to get creative and make your own combinations.
Whether you prefer a salty mix, a sweet treat, or a little of both, you can customize your bowl based on what your tastebuds are telling you.
Toss freshly popped popcorn with melted butter, coconut oil or olive oil to give the seasoning something to stick to, and then sprinkle on your choice of toppings. Try these suggested flavorings to get you started.

If you prefer savory

Pizza popcorn: Cheesy, herby, garlicky and just a little spicy -- and better for you than eating an entire pizza or a basketful of breadsticks for dinner. If you're dairy-free, substitute nutritional yeast for the Parmesan.
Sesame nori popcorn: Ethereally crunchy seaweed snacks aren't just for eating on their own. Crush them into sesame oil-tossed popcorn for a Japanese-inspired bowl and add toasted sesame seeds for more texture.
Mexican popcorn: If you love the flavors of elote, or Mexican street corn, this seasoning is just as tangy but without the mess. Fresh lime juice and zest add a little extra something to each bite.
Buffalo ranch popcorn: Once you've made homemade ranch seasoning, you won't want to go back to the store-bought packet. Add buttery hot sauce and you've got a game-watching go-to.
Barbecue popcorn: No sauce necessary with this recipe -- smoked paprika is the secret to this simple sweet-and-smoky popcorn seasoning.

For a sweet sensation

Hot cocoa popcorn: Instead of weighing your popcorn down with melted chocolate, try a lighter kettle corn-style take on sweet and chocolaty popcorn. Mini marshmallow bits make it just right for enjoying by the fire.
Spiced snickerdoodle popcorn: You can make this better-than-bagged version with only cinnamon and sugar, but warming spices like cardamom and ginger lend this popcorn a more sophisticated feel.
Strawberry popcorn: Whirring freeze-dried strawberries in the food processor gives you a pretty pink powder that makes this popcorn berry different from other sweet snacks.

Toasted coconut popcorn: Use toasted coconut from the snack aisle if you don't want to toast your own unsweetened coconut chips for this tropical take on popcorn. Add a few handfuls of cashews or almonds to turn it into a trail mix blend.
Maple pumpkin spice popcorn: Whether you choose to make your own pumpkin spice blend or go with a premixed version, you'll still get all the fall feels from this flavoring.

If you want to buy, choose small producers that make them at home for you.

6. Fruits: These are the most easily available snack along the way. As you travel, you are also able to pick up locally grown fresh fruits; that means more nourishment. Fruits, in addition to fiber, add a lot of vitamins and antioxidants. They are rich in potassium and have some sodium in addition to a lot of moisture, so they keep you hydrated and prevent you feeling tiered. 

7. Cheese: Fresh cheese and paneer are easily available anywhere you go. Proteins, calcium and antioxidants all add immense health benefits. Imagine choosing a paneer chaat with tomato, onions, green chilies and some green chutney over a samosa, I don't need to say more.

8. Yogurt: or Plain dahi which is packaged is another easy-to-source food along the way. Travelling usually has a lot of us dealing with digestive issues. Probiotic rich Yogurt is a good way of keeping us and our tummy happy. You can add some local fresh fruit or nuts or both and voila! A healthy snack is ready to eat.

9. Egg: another easy protein rich, low carb snack to eat. Avoid the butter omelettes, a simple boiled egg with a slice of Multigrain bread and you will be set for the next couple of hours. If you are keeping a check on your cholesterol intake and eat mostly animal proteins during meals then remove the yolks. 

While choosing the list, I have especially kept proteins in mind because they bring satiety to our meals, one of the most important needs for controlling overeating. While all the above snacks are healthy, they are not calorie free. In fact, some are calorie dense, so keep an eye on the portions. Nuts :- 30gm/ serving, nut butter:- 2 table spoons/ day, Dairy:- 40gm/ serving

Havmor Ice Cream carts to sell ITC Master Chef Frozen snacks - Business Standard

South Korean Lotte Group-owned ice cream brand Havmor on Tuesday said it has entered into a partnership with ITC, following which its ice cream carts will sell Master Chef Frozen snacks of the Kolkata-headquartered firm.

The tie-up is part of ITC's new routes-to-market distribution strategy and will enable Master Chef to leverage 100 Havmor ice cream carts, according to a joint statement.

It will also allow Havmor to generate incremental earning opportunities for its channel partners and vendors, and help the company leverage its operating costs during the ice cream lean season of November to March.

Besides, it also gives Master Chef an opportunity to enhance the availability and accessibility of its range of frozen food offerings during the winter months when the frozen foods industry registers a 30 per cent increase in sales vis the summer months, it added.

The carts will be located at 100 locations across Delhi and NCR, which can also be located via Google MyMap.

Havmor MD and CEO Komal Anand said, "This is a win-win initiative for both the and its channel partners. It helps Master Chef enhance availability during the season and it allows channel partners generate incremental revenues during winter months."

Expanding pushcart operations is an integral part of Havmor Ice Cream's strategy to enhance its reach, he added.

Ashu Phakey, vice-president and business head (frozen foods) of ITC Ltd, said: "With a strong distribution model in the ice cream space, we are confident that consumer-centricity and extensive reach will complement our capabilities in creating innovative products to enhance the overall value offering for the customers."


In 2017, Lotte Confectionery had acquired Havmor Ice Cream Ltd (HIL) in a Rs 1,020-crore deal.

At Least the Snacks Were Fantastic in 2021 - Grub Street

This past year was a bust in most ways, but there has never been a better time to shop for artisanal olive oil. It is a staple of this new crop of provisions shops, which is how I like to think of stores that sell “curated” collections of tinned fish. The shops are tiny and adorable, and they sell a lot of things in jars. Everything is imported, unless it is local, or perhaps from Portland (either one is fine). They are temples of sensuality — not actually because you can’t taste anything — or at least the promise of it, and even the potato chips (jamón Ibérico–flavored, imported from Spain) are displayed like art.

It is an imprecise category, the provisions shop. I know that. But life is messy. (A proper provisions shop is never messy.) A provisions shop is too small to qualify as a grocery store, and while it might serve food, it is not a restaurant. You could argue they are specialty stores — many of them do specialize, in genres like “local” or “Europe” or “vegan” — but their overarching specialty is niceness: an entire miniature world where everything is nice!

We already had stores like this, obviously: We had Marlow & Sons, Bklyn Larder, Mekelburg’s, and Court Street Grocers — the list goes on — and then, in the first months of the pandemic, a bunch of restaurants pivoted to groceries, and suddenly Hart’s and Olmsted and Colonia Verde (among many, many others) sold provisions, too.

But did we always have so many? All year, new provisions shops seemed to spring up like mushrooms. (Provisions shops sometimes sell mushrooms.) There was General Irving in Bushwick, stocked with British potato chips and Sfoglini pasta, and Alimentari Flâneur, the city’s leading source of sexy walnuts. Local Roots Cafe and Market has tea eggs and bulk beans. Sami & Susu is more persuasive as a café but has a full provision wall (Spanish sardines, New Jersey granola). Romero Delicatessen is mostly Euro-provisions but with a full café. GreenPot, in Greenpoint, is a vegan grocery and coffee shop (“all our milk is oat milk”), while down the street, Big Night (“Dinner & Party Essentials”) is a one-stop shop for hand-blown salt bowls and single-origin black pepper. Meanwhile, some of the pandemic pivots stuck: Fort Defiance, now on hiatus, will be a restaurant and a cocktail bar and a general store; the temporary Olmsted shop spunoff into Evi’s Bäckerei, where, in addition to Austrian bäcked goods, you might also pick up shallots, small-batch fish sauce, and chili crisp.

These shops are practical, exactly. For one thing, the food they sell is typically of the “snack” variety.

Technically, if you subscribe to the dictionary definition, then provisions are “a supply of food and other things that are needed,” and a provision shop is an emporium of wants.

I spent all year wanting, mostly for abstract things. I wanted this to be over and to feel better and to go to parties. It was all obvious and embarrassing. Provision shops, though, offer direction; they are stocked with actual, concrete things to want. And throughout 2021, I could want them!

Every store is different, but there are certain recurring themes. Rancho Gordo beans and Duke’s mayonnaise, almost certainly. Also: Matiz Wild Spicy Sardines, Güeyu Mar chargrilled octopus; Maldon salt; Ghia non-alcoholic apéritif; Sfoglini pastas; Spindrift and Sanzo; granolas (earthy); chocolate bars (attractive); an infinite array of hot sauces, salsas, hot honeys, chili oils; and several kinds of jam. Usually, although not always, you can buy a T-shirt and a tote bag.

Mostly, I bought nothing: As a rule, provisions are not cheap, which is what makes me want them. They aren’t food, like at the grocery store, which is boring. They are absurd indulgences, which are fun. But not so absurd I can’t justify them: Don’t I have to eat? And if I have to eat, would it be so wrong, really, to make it just slightly nicer?

At Big Night, I considered a package of pane di musica. It cost $10 and it was a box of crackers. I put it back. Then again, at the Meadow, which recently reopened in Nolita, I’d bought a small jar of Sicilian pistachio spread for $20. “It doesn’t have dairy!” is how I rationalized it in my mind. Also, it’s Christmas! I don’t celebrate, personally, but I like to participate in a cultural moment. They’d wrapped it like a present, so I presented it to my husband as if it were one. “It’s very … sweet,” he told me, referring to the pistachio spread. I have been eating it alone by the spoonful ever since.

That is the other thing about these stores: There is always the possibility that you are shopping for someone else. Everything would be a perfect hostess gift if I were going anywhere, but for most of 2021, I wasn’t. This only made me want things more.

Provision shops proved to be the perfect little escapist paradises. Nobody is bored in the provision shop, or sad, or tired. They say, politely, What a joy it is getting to cook dinner! At least, it could be! I wanted this fantasy: I was glamorous and happy and probably European, and everything I touched was beautiful and all the labels had impeccable graphic design. Twenty-dollar imported condiments do not seem like a permanent or sustainable solution to either the pandemic or my personal malaise, I realize, but I will say this in my defense: The pistachio cream is very good.

A man who found a baby frog in his salad box is taking care of him by feeding him snacks and giving him baths.

Simon Curtis took to Twitter to share his chronicles with the little frog he has named Tony.

"I found the cutest little frog in the bottom of my romaine lettuce tonight- it’s too cold to set him outside (27 degrees), but he’s been living in the lettuce in the fridge for several days now- does anyone know what I should do so that he doesn’t die?" Simon tweeted.

In the photo, Tony was seen in a container sitting near the lettuce.

Simon said that even though he bought the salad four days before, the frog was "hopping and clearly well."

In an update, Simon said that he had put the "remaining lettuce back inside" the box and gave the frog a "mason jar lid of water, and sprayed the entire container down with water."

Tony somehow managed to escape his home but Simon found him on the top of a door frame.

The little amphibian allowed his human friend to pick him up. Watch:

"Just spoke to Mark Howery, Senior Wildlife Diversity Biologist at Oklahoma Department of Wildlife Conservation, and was able to confirm that Tony is indeed a green tree frog," Simon said in a tweet.

The frog was given some live wax worms. He also got to take a bath in a mason jar lid.

And then, Tony escaped from his container to go and hide in the shower.

“He was so dehydrated and shriveled I was worried he’d died, but he’s now immersed in distilled water, cleaning himself, and coming back to life!!” Simon wrote.

Simon then asked people if he should "keep Tony as a pet or release him."

In a turn of events, Tony apparently had had a “third escape adventure.”

Simon then moved Tony to the bathroom "where the lighting isn’t as harsh and there isn’t as much activity."

Simon said that he is "incredibly torn" as he "really don’t know what to do." He wrote, "I love him so much. He feels like a little Christmas miracle.'

"I’m very happy to keep Tony as a pet, but only want to do that if it is the right thing to do for both him and the environment. Ideally, I’d take him to a creek and watch him hop away to finally have the little frog life he was trying to have in the first place," Simon added.

He eventually decided to keep Tony after "consulting with Dr. Jonathan Kolby, @MyFrogCroaked."

This recipe by Chef Ranveer Brar is one for the books. Soft on the inside and crispy on the outside, these easy-to-make eggplant fritters will be a holiday favourite at your house in no time. The pakoras can be shallow fried, air fried or even baked, according to your preference.

Ingredients

*8-10 slices, eggplant, cut in ¼ inch thickness
*1 tsp, red chili powder
*½ tsp, turmeric powder
*½ tsp, black pepper powder
*1 tsp, lemon juice
*Salt as per taste
*Oil for frying
*For batter
*1 cup, besan/chickpea flour
*½ cup, rice flour
*½ tsp, chili flakes
*1 tbsp, coriander leaves, finely chopped
*½ tsp, turmeric powder
*¾ tsp, carom seeds (ajwain)
*Salt as per taste
*Water as required

Process

*Combine red chili powder, turmeric, black pepper powder, salt, lemon juice. Rub the slices with prepared mixture and keep aside for 6-8 minutes.

*Combine all the ingredients for batter, add little water, and prepare a batter of medium consistency such that it coats the back of the spoon. Do not add too much water at a time.

*In a deep bottom pan/kadhai, heat oil. When hot enough, dip the slices one by one in the batter and slide them in hot oil.

*Fry them till golden brown and crisp. Do not fry them on high flame as it will burn the fritters. Do not overload the pan/kadhai by adding too many slices at a time. Fry them in batches.

*Drain them on absorbent/paper towel.

*Serve them hot and crisp with chutney/sauce of your choice

Christmas Salad

This salad recipe by Masterchef Pankaj Bhadouria is perfect for brunch. It can be made in large quantities and stored in the fridge. Take a look here:

Ingredients

*3 – 4 bunches salad leaves
*½ cup cherry tomatoes
*1/2 cup paneer cubes
*1/2 cup chopped pineapples
*1/4 cup glazed cherries
*1/2 cup cheese cubes
*1/4 cup black olives
*1/4 cup green olives
*1/2 cup baby corn
*For the dip
*2 tbsp mayonnaise
*1tbsp tomato ketchup
*A few drops tabasco sauce

Method

*Take thermocol or Styrofoam sheets and cut them into triangles. Cover them with silver foil.

*Now pin the tree with salad leaves and cover the entire tree.

*Next, take some red cherry tomatoes, beetroot, pieces of cottage cheese, pineapples, glazed cherries, pieces of cheese, black and green olives and baby corn.

*Mount these on toothpicks. Spread the remaining cheese and berries onto the plate.

*Mix together the mayonnaise and tomato ketchup to make the dip. Serve on the side with the salad.

For batter–

*4 tbsp Refined Flour
*2 tbsp Corn Flour

Other ingredients–

*250 gms Paneer

*Add some water to make a batter just enough to coat the paneer pieces well.

*Dip paneer fingers in batter and then roll in breadcrumbs. Repeat this until paneer fingers are double breaded.

*Repeat this step for the rest of the paneer pieces.

These sweet and savoury snacks are a favourite with Malayalis during Christmas - The News Minute

Achappam, diamond cuts and avalose unda are just a few of the festive snacks that are shared with friends and family in Kerala during the Christmas season.

Growing up in the Middle East, food blogger Teena Augustine recalls her family’s Christmas traditions as a mix of influences that combined practices from her mom and dad's hometowns in Kerala. For her mother, who is from Thrissur, meat was commonly added to vegetable preparations, such as koorka (Chinese potato) cooked with pork, and served with hoppers. For her dad, who belongs to Kottayam, Christmas Day meant meals with tapioca and pearl spot fish curry.

Across Kerala, regional and geographical variations often determine the traditions that families follow over the holiday season. Wines and cakes are also commonly prepared during this time, using fruits and aromatics available in the area. “For us, Christmas lunch is Onam sadya in non-vegetarian form,” Teena says.

But a hallmark of the season, she says, is sharing sweet and savoury treats with loved ones as part of the celebrations. Christian communities in Mangaluru and Goa follow a practice known as kuswar, in which nearly two dozen varieties of cakes, cookies and snacks are prepared for a platter during Christmas, including fried puffs called neuries and mandas, a traditional steamed rice and cucumber cake.

In Kerala, a similar practice of making an array of crunchy, crispy sweet and savoury snacks exists as well. “We have a lot of fried food,” Teena says. “This is the one time in the year we distribute food in the neighbourhood to friends and family.”

Here are seven popular Christmas snacks made in Kerala during the festive season:

Diamond Cuts

A simple dough is made with maida before it is rolled out and sliced into triangular (or diamond-shaped) pieces, which are then deep-fried. The golden-brown crisps are then coated in a thick sugar syrup that makes this crunchy, sticky sweet snack a hit during the holidays. These snacks can even be made savoury with chilli powder and jeera.

Achappam

Achappams or rose cookies are among the most iconic of Kerala’s array of traditional, crispy snacks, and their appearance over Christmas is almost guaranteed. They are made from a thick batter of rice flour, coconut milk and powdered sugar. The trick, of course, is the special mould that gives the cookies their delicate rosette-style shape. The achappams are often packed in stacks of six or more. Spices such as cumin, sesame seeds or fennel are added for flavour.

Kuzhalappam

Tea or coffee time across India calls for crispy savoury snacks and in Kerala, kuzhalappam is a favourite for that reason. A dough made from rice flour is flattened and rolled into finger-length tubes before being deep fried to a pleasing golden brown. Cumin seeds are often added for taste, as are sesame seeds.

Professionals and ambitious bakers make a version of kuzhalappam that ends up being nearly as long as an arm, though it requires a special kind of finesse to ensure the fried dough doesn’t crack.

Kottayam Churuttu

Churuttu may resemble a samosa from the outside but once you bite into one, you’ll quickly find an entirely different experience. A thin sheet of pastry is prepared, cut into circles and lightly cooked (you may skip this) while maintaining a soft, pliable state. A filling of rice powder, coconut, sugar syrup and cardamom is then made.

The pastry is rolled into a cone shape and packed with the warm sweet filling before being sealed at the edges with simple syrup. The pastries are then left to rest for a couple of hours to allow the sweet, syrupy texture to seep into the translucent dough. Teena remembers this as a rare snack from her childhood, requiring significant skill to create. “This is very special to me,” she says.

Panchasara Varatti

Outside Kerala, Pazham Pori is perhaps the most well-known sweet banana fritter, but another preparation using plantains is a snack that reminds families of the festive season. Raw bananas are peeled and sliced into thick extra-crispy chips, which are then covered in a sweet syrup with crushed cardamom. Sharkara varatti is another version of this, which involves frying pieces of plantain before they’re coated in a jaggery syrup.

Avalose Unda

A podi of powdered rice and coconut is shaped into bite-sized balls using a sweet syrup with cardamom (jaggery or dry ginger may also be added for taste). Once the treats have rested, they are rolled in the remaining podi to coat the entire snack. After it is allowed to harden, you can enjoy a myriad of textures and flavours all rolled in one.

Kumbilappam

If you’re looking for a brief respite from crunchy snacks (though why would you?), Kumbilappam is a simple preparation that uses a sweetened jackfruit filling wrapped in bay or banana leaves. Each package is steamed until warm, fragrant and slightly spicy from additions of cumin and cardamom.

Christmas 2021 recipes: Christmas is almost here but the party will go on for another week or so till we are ready to welcome the New Year. Till then it's time to make merry with friends and family and soak in the festive spirit.

While most of us are done with the preparations, some things are best planned towards the end. For last-minute additions to your Christmas party menu, we have some very interesting suggestions that you would surely like to try for making your get-together extra special.

Whether you are a pure vegetarian who's planning to make most of the seasonal veggies or a die-hard non-veg lover who cannot do without chicken tikka, we have mouth-watering recipes for both categories.

Ingredients:

All purpose flour

2 cup panko breadcrumbs

3 large eggs, beaten

1 head cauliflower, chopped into bite-size florets

1/3 cup honey

1/3 cup soy sauce

2 garlic cloves, minced

Juice of 1 lime

1 tbsp. sriracha

1/4 cup water

2 tsp. corn starch

1/4 cup Sliced scallions

Method:

* Preheat oven to 400 degrees and line a large baking sheet with foil.

In a large bowl, combine flour and cauliflower, toss until fully coated. Set up a dredging station: In one bowl, add panko breadcrumbs and in another bowl whisk eggs and add 2 tablespoons water. Dip cauliflower in beaten eggs, then panko until fully coated. Transfer to a prepared baking sheet and season generously with salt and pepper. Bake until golden and crispy, 20 to 25 minutes.

* Meanwhile, make sauce. In a small bowl, whisk together corn-starch and water, until the corn-starch dissolves completely. Set aside. Combine soy sauce, honey, garlic, lime juice and Sriracha in a small saucepan over medium heat. When the mixture reaches a boil, reduce heat and add the corn-starch mixture. Bring to simmer again and cook until sauce thickens, about 2 minutes.

* Toss cooked cauliflower in sauce until evenly coated. Return the cauliflower to baking sheet and broil for 2 minutes.

* Garnish with scallions and serve immediately.

Ingredients:

2 bunch or 120 gram spinach palak leaves

2 tbsp ghee

1 tbsp jeera

1 inch ginger

1 tbsp green chilli

2 medium size chopped capsicum

½ cup green peas

½ tsp turmeric powder

Salt to taste

1 tbsp mint leaves

2 tbsp coriander leaves

4-5 or 300 g boiled and mashed potatoes

1 tsp black salt

1 tsp jeera powder

1 tsp garam masala

1 tsp amchur powder

Salt to taste

3 tbsp roasted besan

1/4 + ¼ bread crumbs

5-6 cashews

Chaat masala

For bread crumbs

4-5 crushed white part of bread

Method:

* In a pan, boil some water and add spinach leaves. Cook it for 2 minutes. * After 2 minutes, the leaves will be all shriveled up. This is called blanching the spinach. Remove from the pan and dip in cold water. Set aside.

* Now in a pan, add 2 tbsp ghee, cumin seeds, chopped ginger, and green chili and saute for 30 seconds.

* Now add green peas (I kept frozen peas in warm water for 2-3 minutes before adding to the pan), chopped capsicum, and blanched spinach leaves.

* Cook the mixture till there's no or very little moisture left in it. This will take 2-3 minutes.

* Let the mixture cool down a bit meanwhile in a pan, add crushed white part of the bread and dry roast till it becomes crispy. Homemade bread crumbs are ready.

* Then transfer it to a blender. Add mint and coriander leaves to it and grind to a paste.

* Transfer the mixture to a bowl and add boiled and mashed potatoes, black salt, cumin powder, garam masala, amchur powder, and salt.

* Now add roasted besan and bread crumbs to the mixture. Mix everything together till it forms a nice dough.

* Take a little dough of the size of a lemon in your hand and form a round pattie. Press half cashew on it.

* Now coat all kabab with bread crumbs.

* Heat oil in a pan on medium heat. Once hot, place the patties on the pan. fry till golden brown from both sides.

* Serve hot with coriander chutney and salad.

Ingredients:

500 gm chicken leg boneless

11/2 gm gram flour

½ cup hung curd

1 tbsp mustard oil

11/2 tbs ginger garlic paste

¾ chipolata chilli paste

¾ garam masala

½ coriander powder

1tbs chaat masala

½ diced bell pepper

½ diced tomato

½ diced onion

½ Kasoori Methi powder

1 lime juice

Method:

* Dry roast besan on low heat until it's aromatic.

* Take a mixing bowl, put hung curd, ginger garlic paste, chipolata chili pastes and all the above-mentioned spices in it; mix it well.

* Then add lime juice, mustard oil and salt.

* Put chicken leg boneless into it and marinate well. Keep for at least 10 to 12 hrs.

* Heat the oven at 240 degrees for 15 to 20 minutes.

* Cut vegetables into cubes and put in the marination.

* Arrange them on skewers, alternating vegetables and chicken.

* Then put it in the oven pre-heated at 240 degrees for 20 minutes.

* Check the chicken. If it is is tender, then brush the chicken tikka with soft butter and put Chaat masala on top if required.

* Serve with mint chutney and Laccha onion.

200 gm mushroom

6 pods finely chopped garlic

½ tsp chopped ginger

5 Spring onions (white part)

1/2 spoon Salt and pepper

Oil as needed

Spring onion (green part) finely chopped

For coating mushroom

3 spoons Corn flour

1 spoon Maida

1/2 spoon Salt

1/2 spoon Pepper

Water as needed but very little

1 tsp dark soya sauce

Method:

* Wash the mushroom.

* Make a batter with corn flour, refined flour salt and a little water.

* Heat the oil in a pan and dip the mushroom into the batter.

* Fry them till they are golden brown and keep aside.

* Heat the pan, add oil, sauté the garlic and ginger and add white part of spring onion.

* Add golden fried mushroom, salt pepper and spring onion.

    ITC, Havmor tie up to vend frozen snacks - BusinessLine

    ITC has entered into a partnership with Havmor Ice Cream to distribute ITC Master Chef Frozen Snacks through 100 Havmor ice-cream mobile carts in the national capital region.

    An ITC statement said Havmor Ice Cream’s pushcart network will be used to sell the frozen snacks during winter (November to March), a peak season for the snacks and a non-peak season for ice cream. The frozen foods industry registers a 30 per cent increase in sales during winter, compared to summer, it said.

    Ashu Phakey, Vice-President and Business Head, ITC Limited (Frozen Foods), said, “Healthy and convenience-based snacking as a trend is growing across the country as consumers become more health-conscious, whilst having lesser time on their hands due to a busy lifestyle.”

    ITC picks up 8.70 per cent equity stake in Mother Sparsh Baby Care

    The company said that over 50 ITC Master Chef frozen snack products, for both foodservice industry and retail end-users, are available in over 100 cities.

    “We are glad to partner with Havmor Ice Cream to further strengthen our distribution reach,” Phakey added

    The mobile carts will sell frozen snacks ranging from burger patties to fries, pizza pocket to aloo tikki, potato bites to harabhara kebab, among others.

    Packaged food companies bet big on festival season

    Komal Anand, MD and CEO, Havmor Ice Cream, said, “This is a win-win initiative for both companies and channel partners. It helps ITC Master Chef enhance availability during season and allows Havmor Ice Cream’s channel partners generate incremental revenues during winter months. Expanding pushcart operations is an integral part of Havmor Ice Cream’s strategy to enhance its reach. Given that the frozen supply chain in India is evolving, leveraging the existing ecosystem to expand reach at optimised cost will continue to remain a focus area.”

    The frozen foods retail market has been growing at 15 per cent CAGR, with their availability also expanding in e-commerce channels, the statement added.

    Food firms want a bigger bite of snacking category - Mint

    Homegrown Bikanervala Foods Pvt. Ltd, which sells a range of packaged snacks under the Bikano brand, also launched two new products—Mexican Crunch and Fun Sticks. In a statement, Bikano said it will build on its “western" snacks category for children and the youth.

    Manish Aggarwal, director, Bikano, Bikanervala, said the pandemic and the ensuing lockdown in 2020 led to a drastic change in the eating habits of most Indians. The earlier established pattern of three meals a day transformed into a “multiple snacking pattern" with high nutritional-value snacks being preferred over fast food, he said.

    Chocolate and cookie company Mondelez in its Annual State of Snacking report in December 2020, too, mentioned that two-thirds of Indians snacked more during the pandemic. In fact, 77% of those surveyed said they preferred snacks to meals. However, the survey was conducted last year when work from home was the norm and mobility had not picked up.

    Snacking category volumes grew 8% between April-May 2019 and April-May 2020, and jumped further a year later to 12% between April-May 2020 and April-May 2021, Aggarwal said, citing Kantar data. Clearly, demand for packaged cookies, chips, noodles and macaroni grew as consumers created new in-home eating occasions during the pandemic.

    Even with people increasingly stepping out, Karthik Ganesan, partner, consumer products, retail and strategy practice, Bain and Company, does not foresee a slowdown in the snacking category. Most offices will continue to follow the hybrid work model, Ganesan said. In the past 18 months, both salty snacks and biscuits witnessed low to high teens growth in value terms. “A big chunk of this was consumption-led (versus price-led in the pre-pandemic times)," he said.

    While traditional Indian snacks (namkeens) make up about 50% of all branded salty snacks and have continued to grow in double digits, bridged and extruded snacks are around 35% of all packaged snacks and will grow faster (in high teens). “They will drive penetration in consumption occasions for younger consumers," Ganesan said. Snacks that are shaped differently (like Kurkure) are counted among bridged and extruded snacks and are popular as they are lighter and have more pieces in a pack than, say, regular chips.

    The other perceptible change is the move towards healthier eating, a trend accelerated by covid. “Before purchasing packaged food, people can be seen enquiring about the ingredients, avoiding any food with preservatives and artificial food colouring," said Aggarwal.

    “A majority of them are actively seeking snacks that are high-protein and vitamin-rich. With rapidly shifting consumer choices, it is almost certain that new players will enter the market to capitalize on the rising trend," he added.

    To be sure, new-age startups in the direct-to-consumer (D2C) segment have already taken the lead in occupying the white spaces in healthy snacking. Multiple D2C brands, such as YogaBar, True Elements and Gladful, have been launched and funded in the past two-three years, said Ganesan.

    Although launches may have been led by online-first firms, more and more offline players are also recognizing the need to expand their portfolios and address more need spaces and occasions, he said. “This can be seen in the new launches by Mondelez, such as Fuse Fit or Bournvita Crunchy, both playing on healthy and mindful snacking," he said.

    Aggarwal said innovations in packaging with multiple serving options in ready-to-eat food products is also propelling growth in the category with leading firms looking beyond chips. Packaged salty snacks and biscuits is an over 65,000-crore market and growing, he added.

    More than 65% of all snack consumption is now branded versus less than 40% a few years ago, Ganesan said. Branded snacks category is poised for growth with more brands entering the fray, consumers switching from unbranded products, increasing consumption occasions fuelled by work from home and premiumization through healthier snacking options.

    ITC to sell frozen snacks through Havmor ice cream carts - Times of India

    NEW DELHI: ITC Master Chef Frozen Snacks has entered into a strategic partnership with Havmor Ice cream owned by the Lotte group, a South Korean conglomerate.
    The partnership is a part of ITC’s new routes-to-market distribution strategy and will enable ITC Master Chef to leverage 100 Havmor Ice cream carts.
    This partnership allows ITC Master Chef to use Havmor Ice cream’s pushcart distribution network during peak season for frozen snacks (Nov to Mar) which is generally the non-peak season for ice cream in markets where winter is dominant.
    It gives ITC Master Chef an opportunity to enhance availability and accessibility of its range of frozen food offerings during the winter months when the Frozen Foods industry registers a 30% increase in sales vis the summer months.
    For Havmor Ice cream, the partnership creates incremental earning opportunities for its channel partners and vendors and helps the company leverage its operating costs during the ice cream low season.
    “Healthy and convenience-based snacking as a trend is growing across the country as consumers become more health-conscious, whilst having lesser time on their hands due to a busy lifestyle,” said Ashu Phakey, VP and Business Head ITC Limited (Frozen Foods).

    Samosa and pav bhaji are the top snacks of 2021, says Swiggy - Livemint

    The humble samosa is India's "most binged snack" of 2021 with about 50 lakh orders, topping the list of the most ordered food during the year, according to food ordering and delivery platform Swiggy.

    Coming a distant second in the top food orders of the year list was pav bhaji and gulab jamun with 21 lakh orders each, as per the sixth annual 'StatEATstics report' by Swiggy.

    The love for 'desi samosa' was reflected in the fact that it was ordered "six times more than chicken wings". "The most binged snack of the year was the Samosa with about 5 million orders on Swiggy...," it said in a statement.

    When it came to India's top dishes in 2021, the StatEATstics report found biryani to be the undisputed dish, topping the charts for the sixth year in a row.

    "In 2020, 90 Biryanis were ordered per minute and in 2021, India ordered 115 Biryanis per minute, or 2 Biryanis per second," Swiggy said, adding chicken biryani was ordered 4.3 times more than the vegetarian counterpart.

    Interestingly, over 4.25 lakh new users made their Swiggy debut by ordering a chicken biryani, it added.

    The StatEATstics report is based on orders received by Swiggy for food delivery, grocery on Instamart, pick up and drop service Swiggy Genie and HealthHub platforms between January and December 2021.

    Grocery platform Instamart delivered over 28 million packs of fruits and vegetables alone in 2021. Tomatoes, bananas, onions, potatoes, and green chilies were the top five fruits and veggies delivered in under 30 minutes, it said.

    As far as instant indulgence was concerned, Swiggy said 14 lakh packets of instant noodles, 31 lakh packets of chocolate and 23 lakh tubs of ice creams were delivered.

    With COVID-19 still around, the war against the virus continued with 1 lakh masks and over 4 lakh soaps and handwashes ordered online during the year, it added.

    The year also saw deliveries of over 70,000 packs of band-aid, 55,000 packs of diapers and 3 lakh packs of sanitary napkins in 15-30 minutes, as per the report.
