Chef Kunal Kapur shares his favourite savoury snacks & dessert recipes that will make your holiday season even more delightful:

1. Soya Kebabs

Ingredients:

- 1½ cups Soya Chunks, cooked (boiled and squeezed dry)

- 2 tbsp Garlic paste

- 1 tbsp Ginger paste

- 1 tbsp Kashmiri chilli paste

- 1 tsp Garam masala powder

- 1 tsp Coriander powder

- 2 tbsp Curd ½ tsp Kasuri methi powder

- 1 tsp Chaat masala 1 tbsp Lemon juice

- 2 tbsp Cashew-nut paste

- 3 tbsp Mustard oil

- Salt to taste

Method:

- In a bowl, add mustard oil, garlic paste, ginger paste, Kashmiri chili paste, garam masala powder, coriander powder, curd, kasuri methi powder, chaat masala, salt, lemon juice, cashew-nut paste and mix well.

- Add cooked soy chunks and keep it marinated for 30 minutes.

- Insert Soya Chunks in satay sticks and grill. Serve hot with coriander chutney and ketchup

2. Makhana Bhel

- 2 cups flavored makhana

- 1 tsp chaat masala (if required)

- 3 tbsp roasted peanuts

- 2 tbsp green chutney

- 1 tbsp Tamarind Chutney

- 2 tbsp finely chopped cucumber pieces

- 1 mix bowl of boiled potatoes, onions, tomatoes and green chilies

- 2 tbsp pomegranate

- 1 bowl of bhujia

Method:

- Take the flavored makhanas in a bowl and add chaat masala if required

- Add roasted peanuts, and finely chopped veggies to the makhanas and mix well.

- Add green chutney and tamarind chutney to this mixture.

- Add finely chopped cucumber and pomegranate to the cheezy onion makhana bhel.

- Garnish with bhujia and coriander. If needed, add fruits and serve

3. Crunchy oats pattice

Ingredients:

- 2 cups of rolled oats

- mashed potatoes

- 1/2 cup mixed steamed veggies

- Finely chopped onion

- 2 finely chopped green chilies

- 1 tbsp ginger-garlic paste

- 1 tsp cumin seeds

- 1 tsp red chilli powder

- 1 tsp garam masala

- Season with salt to taste

- Chopped fresh coriander leaves

- Maida (all-purpose flour)

- Water

- Breadcrumbs, fine

- Shallow frying oil

Method:

- Take oats, mashed potatoes, mixed steamed vegetables, chopped onion, green chilies (tune the heat level), and ginger-garlic paste in a bowl

- In a mixing dish, combine oats, mashed potatoes, vegetables, onion, chilies, and ginger-garlic paste.

- Heat the oil and add the cumin seeds, red chilli powder, garam masala, and a bit of salt to toast the spices. Toasting spices brings out their flavours.

- Add spiced oil and chopped coriander leaves to the basic mixture. Mix well to ensure that the spices are properly distributed.

- Scoop out parts and form patties to desired size and thickness.

- Make a flour-water mixture, dip each burger in it, then roll it in breadcrumbs for a satisfying crunch.

- In a skillet, heat the oil and cook the patties until golden brown on both sides, about 4-5 minutes on each side. When flipping, use caution.

- Transfer cooked patties to paper towels to absorb excess oil and minimize greasiness.

- These crispy appetizers are perfect for Diwali or any other special occasion. Serve with your favorite chutney or sauce for extra flavor

4. Oats Mawa Halwa

Ingredients:

- 2 tbsp Oil

- 2 cups plain Oats

- Mawa crumbled 1 cup

- 2 cups milk

- ⅓ cup brown sugar

- 5 tbsp mixed dry fruits (finely chopped)

- ¼ tsp cardamom powder

- ¼ tsp nutmeg powder

- 1 tbsp mixed almonds & pistachio (finely chopped)

Method:

- Heat oil in a pan. Once heated, add in plain Oats and roast for 2 minutes.

- Mix the crumbled mawa with oats. Stir and cook for another minute.

- Add milk and continue stirring on low heat to ensure that no lumps are formed.

- Add brown sugar and continue cooking. Next, add chopped dry fruits, cardamom and nutmeg powder. Stir and cook for another 2 minutes

- Sprinkle finely chopped almonds and pistachios on top and serve chilled

The sound of crunching chips is annoying. Doritos has made a silencer. - The Washington Post

The noise of someone chomping on chips can be irritating, especially if it’s directly in your ear, on say, a voice chat or a Zoom call.

Voices — and crunching — are amplified when people are using headsets, which are often worn by gamers, many of whom spend hours at a time playing multiplayer video games.

So the chip brand Doritos created Doritos Silent, a crunch cancellation software that removes the sound of chewing from voice chat, Zoom or any call that uses headphones. But it was really created for gamers.

“It works on anything that accepts a microphone,” said Dylan Fashbaugh, lead developer at Brooklyn-based Smooth Technology which worked with Doritos to create the free app that launched earlier this month.

It can be used on any PC, and the company says it will eventually be expanded to other devices.

Fashbaugh has been a gamer for about 20 years, and said he is familiar with the annoyance of fellow gamers chewing loudly on chips.

“Crunch is one of the most distracting features that could throw someone off their game,” said Mustafa Shamseldin, chief marketing officer of international foods at PepsiCo, which owns Doritos.

Doritos surveyed more than 3,000 people — including in China, India, Portugal, Britain and the United States — and found that gamers like to snack while playing, but they also think the sounds of other people snacking is distracting.

Of the 200 people surveyed in the United States, 90 percent snack while gaming, and the majority said chips make the most bothersome noise when another gamer is eating them.

Research also showed that the crunch of Doritos is part of what people like about them, said Fernando Kahane — the head of global marketing for the chip brand.

“There is something about the crunch that has to do with it, funnily enough,” he said.

Many people crave crunchy foods because they are more stimulating to eat than soft foods, which is why chips are a go-to snack.

“That’s one of the reasons Doritos is so popular with gamers,” Kahane said.

Knowing the crunch was a draw for the eater and a drawback for the listener, they came up with a workaround for what they call a “pain point.”

“Instead of having to launch new Doritos, we could actually solve that pain point with a technology,” said Kahane.

The prospect of making a less crispy Doritos chip surfaced several years ago, and was widely mocked.

In 2018, the former chief executive of PepsiCo claimed Doritos was developing a “chip for women,” which was intended to be a low-crunch alternative, with reduced orange finger dust. There was backlash online, and PepsiCo later said it was a misunderstanding, and it was not, in fact, releasing a specific Doritos product for women.

To address the crunch issue in the gaming community, Doritos turned to technology.

“That’s always been a distraction for me,” Fashbaugh said of the chomping in his headphones. “I’ll lose my focus when one person starts eating. That sound of crunching can just take you out of the experience, but you still want to enjoy your snack because realistically snacking and gaming go hand-in-hand.”

Working on this software, Fashbaugh said, has “unified two of my big interests of creating technology and gaming.”

He and his team began the process by researching and testing out various noise cancellation techniques. Then, “we got a lot of people to crunch Doritos into a microphone,” said Fashbaugh.

About 500 people were recorded munching on Doritos, and those recordings were used to simulate 5,000 different crunch sounds.

“Then, we took sounds of lots of us talking and other people talking, and mixed those together with the crunch sounds so we could generate an AI that could learn the sound of crunching and voicing,” said Fashbaugh. “We needed to make something that could really separate the sounds of voices and crunches.”

While the AI software is “trained exclusively on Doritos,” he said, it actually works on some other crunch sounds, including different types of chips, crackers and raw vegetables.

“I think it’s going to have an impact,” said Fashbaugh, adding that it was designed to keep voice chat clear.

Kahane said this is just the beginning of the chip brand’s AI ambitions.

“In the past, we would think about food innovation. Now, we are thinking about the whole consumer experience,” Kahane said.

Gohona bori is a crisp, salty lentil snack that is meticulously hand-crafted and reserved for the most special occasions.

Jyotsna Maity fixed the large, circular brass plate with a meditative gaze. A bed of poppy seeds was neatly and evenly spread over the dish. She began to slowly extrude the lentil batter through the piped cloth bag she had in her right hand, holding it perpendicularly over the platter. Her nimble wrist delicately twisted and turned to form concentric circles, decorative curls and miniscule triangles with the gooey paste. With a sharp, controlled jerk of her hand, she completed the design that now resembled a dainty designer necklace.

Maity was the head of the squad of women similarly occupied on the spacious terrace: their heads bent over brass plates and hands busy to create a culinary artform, the tricks of which have been handed down to them orally through generations.

I was at Chauddhachuli village, located in the East Midnapore district in the eastern Indian state of West Bengal, to witness the ancient art of gohona bori. While bori is a plain lentil dumpling, eaten as a humble accompaniment to lentil soup or added to fish and vegetable dishes to enhance the flavours, gohona bori is a specialty snack that looks like a meticulously designed ornament (gohona in Bengali language means jewellery). Salty with a crunchy twist from poppy seeds, gohona boris are reserved for special occasions as tasty tea-time snacks. They can also be a delightful starter for an elaborate and traditional Bengali meal, with a spoonful of ghee (clarified butter) and eaten with piping hot rice.

"Preparation of gohona boris is a winter activity and largely a gendered practice," said Maity. Usually, starting on a day in mid to late November, village women take an early morning bath, wear fresh clothes and perform a puja – the Hindu ritual of the worship of the divine – before starting the laborious procedure of grinding the tenderised black grams (a South Asian legume also known as urad daal or bean) that have been soaked overnight. To do this, they use a tool called shilnora in Bengali language: a flat mortar and stone pestle.

"We usually need two rounds of manual grinding to get a soft, pasty texture," Maity said. The batter is then whisked by hand until it turns silky smooth and fluffy. Then it is ready to be gently piped over the ultrathin layer of poppy seeds with myriad patterns and motifs of free-flowing finery. One piece at a time.

"Two days of drying them under the warm and mellow winter sun will now lend a perfect balance of crispness and flavour to these gohona boris," Maity said, as her small team of village women inspected the freshly made batch of artisanal treats, shaped like earrings, pendants and tiaras, laid out on the terrace. Once they've dried in the sun, the delicacies are fried in mustard oil until both sides are lightly browned all over.

"Gohona boris used to be a part of the bridal caparison back in the olden days," said Animesh Das, who heads the gohona bori project of Turiyo Foundation, a local organisation focused on entrepreneurial programs for rural communities. The foundation has partnered with Maity and other local women to produce gohona boris in small batches and market them.

"Small-scale is the operative word with this heritage edible art," Maity said. This is because the fine skill set needed to produce gohona boris makes this unsuitable for mass production. The packaging has to be immaculate for the fragile and brittle snacks that have a limited shelf life. "So yes, this has to remain as a handicraft, as it has always been," Das confirmed.

No one is certain when the culinary craft originated, but it was first prepared in the aristocratic households of the East Midnapore district, where the sunny and dry climate is perfect to sun-bake the gohona boris. In 1930, when the Nobel Laureate poet Rabindranath Tagore was presented with a box of gohona boris, he was so intrigued by the exquisiteness of the goodies that he had them photographed and displayed as exhibits at the Kala Bhavana (Department of Fine Arts) in the university town of Shantiniketan, near Kolkata.

"I am not sure when and how the unassuming, no-frills bori transformed itself from a pantry staple to an artisanal snack in East Midnapore district," said Das. Here, he said, it is reserved for special occasions such as the first visit of the son-in-law to the bride's home, or for a get together of long-lost friends and relatives.

Maity and her teammates treat gohona bori not only as an ornamental accompaniment to a festive meal, but as an integral part of a cultural legacy they grew up with. "We organise winter workshops here in Chauddhachuli. However, there is no pre-set blueprint for this edible art," said Maity. "Once you master the craft, your imagination takes over and you can even create newer designs of gohona boris – flowers, birds, or maybe, just simple motifs!"

Gohona bori recipe

Makes 10-12 pieces

Ingredients

100-120g (3½-4oz) split black grams

500ml (about 2 cups) water, for soaking the black grams

100g (3½oz) poppy seeds

mustard oil, for deep-frying

Method

Step 1

Thoroughly clean and wash the black grams and soak them overnight in the water to tenderise them.

Step 2

Two rounds of manual grinding with a flat mortar and stone pestle are needed to obtain a soft paste. A food processor or blender can be a good alternative to get the right texture. Once ground to a soft paste, whisk the batter vigorously till the blend turns smooth and consistent. Do not add water, which will spoil the batter.

Step 3

Spread out a thin layer of poppy seeds over a flat platter. Fill a piping bag with the mixture, piling it in slowly to ensure that no air bubbles get into the batter.

Step 4

Start extruding the batter slowly onto the bed of poppy seeds. To have better control over the shape and size of the gohona bori you are trying to make, consider fitting a nozzle with the piping bag.

Step 5

Dry for at least two days under the sun and cool air, then the gohona boris are fry-ready.

Step 6

Deep-fry the gohona boris in oil until lightly browned on both sides. Serve crisp and hot.

Gopal Snacks IPO : गुजरात स्थित FMCG कंपनी गोपाल स्नैक्स अपना आईपीओ लाने जा रही है। कंपनी ने इसके लिए मार्केट रेगुलेटर सेबी (SEBI) के पास ड्राफ्ट पेपर दाखिल कर दिया है। कंपनी का इरादा इस इश्यू के जरिए 650 करोड़ रुपये जुटाने का है। इस आईपीओ के तहत फ्रेश इक्विटी शेयर जारी नहीं किए जाएंगे, यानी इसमें केवल ऑफर फॉर सेल (OFS) के तहत शेयरों की बिक्री होगी। कंपनी के प्रमोटरों सहित शेयरधारकों द्वारा 650 करोड़ रुपये के शेयरों की बिक्री OFS के जरिए होगी।

आईपीओ से जुड़ी डिटेल

प्रमोटर बिपिनभाई विट्ठलभाई हडवानी और गोपाल एग्रीप्रोडक्ट्स और निवेशक हर्ष सुरेशकुमार शाह OFS में बेचने वाले शेयरधारक हैं। प्रमोटर बिपिनभाई विट्ठलभाई हडवानी, दक्षाबेन बिपिनभाई हडवानी, गोपाल एग्रीप्रोडक्ट्स और राज बिपिनभाई हडवानी की कंपनी में 93.5 फीसदी हिस्सेदारी है, जबकि शेष 6.5 फीसदी हिस्सेदारी हर्ष सुरेशकुमार शाह, एक्सिस ग्रोथ एवेन्यूज एआईएफ - I और अशोका इंडिया इक्विटी इन्वेस्टमेंट ट्रस्ट पीएलसी सहित पब्लिक शेयरहोल्डर्स के पास है।


कंपनी का फाइनेंशियल

कंपनी के फाइनेंशियल की बात करें तो इसका मुनाफा मार्च FY23 को समाप्त वर्ष में 170.5 फीसदी बढ़कर 112.4 करोड़ रुपये हो गया। रेवेन्यू में धीमी ग्रोथ के बावजूद कंपनी को इनपुट लागत में गिरावट के साथ हेल्दी ऑपरेटिंग परफॉर्मेंस से मदद मिली है।

वर्ष के दौरान ऑपरेशन से रेवेन्यू पिछले वर्ष की तुलना में 3.1 फीसदी बढ़कर 1,394.6 करोड़ रुपये हो गया, जबकि वित्त वर्ष 2021-23 की अवधि के दौरान प्रॉफिट 130.65 फीसदी की CAGR और रेवेन्यू में 11.15 फीसदी की वृद्धि हुई। इसी अवधि में EBITDA 107 फीसदी बढ़कर 196 करोड़ रुपये हो गया और मार्जिन 7.01 फीसदी से बढ़कर 14.07 फीसदी हो गया।

नमकीन बनाने वाली कंपनी का प्रॉफिट सितंबर FY24 को समाप्त छह महीनों में लगभग 7 फीसदी सालाना बढ़कर 55.6 करोड़ रुपये हो गया। कंपनी को ऑपरेटिंग नंबर्स से मदद मिली है। हालांकि, रेवेन्यू इसी अवधि में 2.5 फीसदी गिरकर 676.2 करोड़ रुपयो पर आ गया।

Rajkot-based Gopal Snacks has filed its draft preliminary papers with capital markets regulator Securities and Exchange Board of India (SEBI) to raise 650 crore through an initial public offering (IPO). The proposed issue is entirely an offer for sale (OFS) of equity shares by promoters and other selling shareholder, according to the company's Draft Red Herring Prospectus (DRHP).

The OFS comprises the sale of shares worth up to 100 crore by Bipinbhai Vithalbhai Hadvani, up to 540 crore by Gopal Agriproducts Pvt Ltd, and up to 10 crore by Harsh Sureshkumar Shah. The offer also includes a reservation for subscription by eligible employees.

Intensive Fiscal Services, Axis Capital, and JM Financial are the book-running lead managers to the IPO. The equity shares of the company are proposed to be listed on the BSE and the NSE.

Gopal Snacks is a fast-moving consumer goods (FMCG) company which was founded in 1999 and offers namkeen, western snacks, and other products across India and abroad. 

As on September 2023, the namkeen makers' products were sold in 10 states and two Union Territories and has a network of three depots and 617 distributors.  The company operates three manufacturing facilities -- Rajkot and Modasa in Gujarat, and Nagpur in Maharashtra.

Gopal Snacks runs three ancillary manufacturing facilities that mostly produce besan, raw snack pellets, seasoning, and spices. These are mainly used internally to make finished products like namkeen, gathiya, and snack pellets.

The companies' revenue from operations increased from 1,128.86 crore in FY21 to 1,394.65 crore in FY23 and profit grew from 21.12 crore in FY21 to 112.37 crore in FY23.

Shares of Prataap Snacks Limited zoomed 15 percent to Rs 938 on November 20 morning after 13 lakh shares changed hands in a pre-market trade.

As many as 17 lakh shares changed hands on the bourses, significantly higher than the one-month average of 20,000 shares. Moneycontrol couldn't ascertain buyers and sellers of the block deal immediately.

In the last six months, the maker of the famous Diamond crisps has given a return of almost 23 percent.

In September, the goods and service tax (GST) department searched the company's manufacturing unit in Bengaluru. The company mentioned that it had extended its full cooperation to the officials and responded to the clarification and details sought by them. It said in the filing that the operations of the aforesaid manufacturing unit were not impacted and continued as usual.

The company operates in three verticals: extruded snacks, potato chips, and namkeen, along with sweet snacks. Potato chips contributed 23 percent to the overall revenue, while namkeen and sweet snacks contributed 16 percent and 3 percent, respectively.

This is because one person has died and 10 others were rushed to the hospital, after eating fruit products from the company at stores across the states. Out of the 10, one was a pregnant woman who went into pre-term labor.

It is advised that anyone who bought them from May 1 to November 15 in 2022 and 2023 should throw them out immediately and clean the areas where they were stored, said the CDC.

The products are sold in 2lb bags and branded HMC Farms or Signature Farms. The numbers are: yellow peach 4044 or 4038, white peach 4401, yellow nectarine 4036 or 4378, white nectarine: 3035, red plum 4042, and black plum: 4040

They can also be found as individual fruits with a sticker that has USA-E-U and a number.

The victims have been located in seven states until now: California, Colorado, Kansas, Illinois, Michigan, Ohio and Florida.

Since it takes up to four weeks to determine if someone is part of an outbreak, the number of those infected is likely to increase, stated the CDC.

"Listeria can survive in the refrigerator and can easily spread to other foods and surfaces," added the centre in a Food Safety Alert.

As mentioned above Listeria, is a rare bacteria that can cause serious issues to pregnant women, newborns, or immuno-compromised people if it's consumed through food.

It causes listeriosis, a serious infection with a case-fatality rate of around 20-30%. It can cause fever, muscle aches, fatigue and in some serious cases, sepsis or meningitis.

The latest listeria outbreak occurred in Florida on June 30, 2022, as reported by the CDC.
