Sustainable Table: Satisfying After-School Snacks
When school is in session, nutritious packed lunches aren’t the only weekday meal parents have to keep at the ready. Quick and healthy breakfast options and easily-prepped weeknight dinners are both in the mix – as is the all-important after-school snack!
When kids need a little something to tide them over until dinnertime, it’s worth considering some options that don’t come pre-packaged. Fresh produce and things you keep handy around the house can often be repurposed to feed kids coming in hot from a long day in classrooms, gymnasiums and practice fields.
Equal parts nut butter – such as cashew, almond or even classic peanut – and Greek yogurt can make for a quick and easy dip that can be sweetened and seasoned easily with a bit of honey, vanilla and cinnamon. It’s also easily adjusted for taste, so just do what you and/or your kids like! If your household snacks on nuts or granola, both can potentially be added for a bit of crunch.
Speaking of nuts and granola, Ina Garten’s granola bars are made with similar common pantry ingredients and will only take you about half an hour to put together. They’re also a great place to finish off some leftover ingredients or snacks, such as dried fruits!
When it come to fresh fruits, options tend to be more freezer-friendly. A blended mix of fruit and juice makes for an excellent popsicle, which is practically guaranteed to be a hit on hot summer days, and the best part is produce doesn’t have to be particularly pretty in order to become the purée you’ll need for a particularly delicious fresh-fruit treat. For minimal effort, though, the frozen banana dipped in chocolate – dark or otherwise – is a classic for a reason, and will also let you prolong the useful life of a banana by about two weeks in the freezer if the last couple from the bunch are starting to look a little spotty.
