Price rise: Tomato tang, ginger zing go missing from bar snacks, bhel puri - timesofindia.com

KOLKATA: Tomatoes and ginger, two significant ingredients that add zing to street food like bhel puri and pav bhaji and accompaniments with drinks also known as chakhna, have made a disappearing act thanks to a surge in prices.

The two ingredients are a staple in Kolkata's street food, both vegetarian and non-vegetarian, with many vendors decorating their stalls with several tomatoes to add colour.
"This time the prices are steeper than what they went upto in June and July and they are eating into the profits which are, anyway, very thin. I have decided to decrease the amount of tomatoes and ginger till the prices cool off a little," said Gopal Sharma who sells pav bhaji in Muktaram Babu Street near Girish Park.

West Bengal sources tomatoes from Himachal Pradesh, Uttarakhand and Karnataka. Due to the floods last month, the tomato harvest has been destroyed in the two northern states. The supply from Karnataka is unable to meet the demand in the state which has led to the rise in price. Tension in some of the north-eastern state has led to a dip in the supply of ginger.
Ginger with rock salt and tomato onion salad are popular accompaniments in several dive bars in the city. But the steep rise in prices has forced bar owners to temporarily stop serving them.
