Diwali 2023: 7 quick-fix Diwali snacks by India’s top chefs that you can make at home - GQ India

This Diwali, save yourself time, money and energy by whipping up some simple quick-fix recipes from your favourite Indian chefs. These Diwali-special snacks—both sweet and savoury—include easy-to-make items like besan ke ladoo by celebrity chef Ranveer Brar, Tarla Dalal’s moong dal pakodas and Vikas Khanna’s spicy aloo samosas.

Most of these recipes include ingredients you already have in your kitchen, and will pair perfectly with your choice of drink. It's time to start cooking!

Diwali 2023: Whip up these 7 quick-fix Diwali snacks with recipes from India’s top chefs

1. Murukku by Sanjeev Kapoor

Ingredients

  • 2 cups rice
  • ¼ cup urad dal (skinless split black gram)
  • 1 tsp cumin seeds
  • ¼ tsp Asafoetida
  • Salt to taste
  • ¼ white butter
  • Coconut oil

Method

  • Dry roast the rice in a warm frying pan without letting the colour change.
  • Wash and soak the rice for about half an hour, then drain and spread it on a cotton cloth to absorb the excess moisture.
  • Grind it to a fine powder.
  • Broil the urad dal to a light brown colour, cool it and then grind it into a smooth powder.
  • Sieve both the flours together through a fine sieve.
  • Dissolve asafoetida and salt in ¼ cup water and add the cumin seeds. Add it to sieved flour to make a firm dough.
  • Rub in the butter and knead with light hands to fully incorporate the butter.
  • To make the murukkus, grease your fingers and take a little dough. Roll them between your palms to a tubular form. Shape this roll into circles, twisting them along.
  • Make two circles next to each other. Press the ends into the circle to secure.
  • Make two batches at a time, and cover them with a wet cloth to prevent them from drying.
  • Heat oil and fry them in batches.
  • Take them on a plate and gently slide them into the oil and fry them on both sides till they become light golden brown and crisp.
  • Drain and let them cool before serving them.
  • Store in a dry air-tight container.
